Crock-pot Salsa Chicken

My brother mentioned that he loves using his crock-pot for cooking for it's convience. When I saw this recipe I thought I would try it soon, but also wanted to share it as well. Last night, Jerry and I watched Alaska State Troopers.. I just can't imangine paying $13+ for one gallon of milk. It makes me wonder how much the Sour Cream in this recipe would cost "Up there" as well. I don't want to even think what a dozen of egg may be, since they are around $1.18 here in Missouri.

Crock-pot Salsa Chicken
4 boneless, skinless chicken breast halves
1 envelope taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray crock-pot with cooking spray. Add the chicken breasts. Sprinkle with taco seasoning. Top with salsa. Cook on LOW for 6 to 8 hours.
When ready to serve, remove the chicken from the pot. Place cornstarch in a small amount of water and stir well. Stir the cornstarch mixture into salsa sauce. Stir in sour cream.
Serve with hot, cooked rice.

Did that today. It was okay and will keep me fed for three more days (1 chicken breast is plenty), but I doubt I'll repeat the experiment.
