OneEgg Cake

I may have shared this recipe before.
We  like to have a bite of cake from time to time but I don't want to make a huge one. This make one layer, which is just what I need.

One Egg Cake
*

3/4 C Sugar
1/4 C Shortening

1 1/4 C Flour
2 tsp Baking Powder
1/2. tsp salt

2/3 C Milk
1 tsp Vanilla
1 egg

Cream shortening and sugar, add egg,  and vanilla and blend well.
Sift together flour, baking powder and salt.
Add to creamed mixture in portions and. The same with the milk.
Beat 300 times by hand, or 2 minutes with hand mixer.
Pour into pan, vakw at 350 25 to 30 minutes or until toothpick comes out clean.

A memory from my childhood that turned into reality



As a small kid, when given paper and crayons, I would draw and color Purple mountains 8ne behind another and over-lapping. Using every shade 8f dark purple and blue, browns and black. With a lighter soloed sky. A place I have never seen. I don't recall hearing "America the Beautiful ", before I was in school, and I was drawing these pictures before I started school. 
It is good to know that the ridges and mountains I saw in my head way back then, exist in real life. They are part of the Cumberland plateau and the Blue Ridge Mountains of North Carolina.

2021 REcaop

With just over a week left in the year, I thought I would give a quick(ish) recap of our year. That is, things I recall but may not be in order. 

If you have been reading the older posts you may have seen my post back in August about the first half of the year.  The closing of the Senior Center for months, and things like that. Well, I think I forgot to add a few things to that
I did a quick look at that post and didn't see any mentions of a couple of items.

The Senior Center did open back up, Everyone had to wear a mask shots or no shots.  Had to sit 6 foot apart. No card playing and no working on puzzles. All we could do, was talk. and we all did a lot of that.
No food was served. No card playing or working on puzzles.

On April 13, I fell off the bottom step at a friends house and broke the Greater Tubular of my left arm.  No casting. just a sling for two weeks, then a sling only to keep others from bumping in to it. then no sling but limited movements.  That was on April 14, I think.. I got my COVID booster on April 16th.  In May, I had emergency surgery to have my gall bladder removed and the recovers afterwards has been interesting.  There is no "Gall Gladder" Diet. or a diet for when it has been removed.  I was told to go on a GI diet, no idea what that ws, so I did some looking. A Very low fat diet. and then slowly add in some small amounts of fat until you find out what upsets your stomach and want does not. . Still working on that part of it.

End of June, The Senior Center was closed, again for 6 weeks because COVID cases rose in our little valley.  We went back in mid August, about two weeks after Schools started back on a hybrid schedule.  Some days in school and some days learning from home.  We were playing cards just before the Center was Closed in August, and when we came back we were playing cards again. No masks were required if you had the shots. Then the New Verint came out Omnicom.   Spreading faster than the first two waves of COVID, but not as deadly. It's been here for about a month now, but so far only 1 death has been because of it, one death in the nation and that person was not vaccinated. 

The band played at the football games and we didn't get to go to one game. I wished we had gone to at least one since this is Bailey's last year to be n the High School band. Because of the rise in COVID and because we were not feeling very well, (Not COVID, just head colds) We missed the Christmas Concert. There is a Spring Concert planned and I hope to get to go see that one. We did get to see Bailey and her the band play, in the Christmas Parade, on December 4th (or was it the 5th)  The parade was not very long but oh, it was worth getting out, even with slight head colds. I felt find, Jerry, not wo much but he's feeling much better, now.

The night of December 11, I fell in the bathroom. twice. I needed to go sit on the pot but was weak (Low Sugar) and as I got into the bathroom, my legs just gave out from under me and I fell forward. (My knees are telling me about that still) I did not loss consciousness. It did take me a bit to get to where I could stand up, again. as I was still having some trouble with my sugar, by then I knew it was my blood sugar.. and as I was half way up, my feet failed, again and I fell backwards onto my tail bone.. and that part of me has been telling me about it. I am still well aware that it is there, but it is not the sharper pains I had the first few days afterwards.   I have to stand up and move around a bit more than I was, or I hurt even more. so I fell like I am in a Jack in the ox with getting up and then sitting down when my lower back starts to hurt. That has been going on for a while now, I think it's a pinched nerve.   Wont know until next year, when I turn 65 and have insurance so I can go see doctors and because I will then be on insurance. (fingers crossed) 

WE got a puppy, for my birthday. He was 7 weeks old on my virthday. and he's is growing like a weed. He is part beagle and part black lab. I am not sure which part is which but one of those parts seems to make it very hard to housebreak him. I "Think" we have him stopped from pooping in the house at least. Haven't had to clean up any of those messes in over a week, but the wet (pee) part is still a work in progress.  


Well, that's the year, so far.  If anything else comes up or happens, I will update my blog about it.  I am making plants on doing more with this blog. Sharing more recipes, and bits about my life

Apple Cake from 1900

Apple Cake 1900
 
1 1/2 c oil
2 C sugar
2 eggs, beaten
2 tsp Vanilla
1 Tbsp Cinnamon
1 Tbsp Baking Soda
3 C Flour
3 C Chopped, raw Apple
 
MIx well, Bake at 300 ( slow oven) for 60 minutes.

home made noodles

Homemade Noodles
 
3/4  plus 2 Tablespoons Sifted Flour
1/2  teaspoon Salt
1/2 teaspoon Baking Powder
1/8 teaspoon poultry seasoning
1 Large Egg, beaten
 
Sift flour and remaining dry ingredients. Gradually add the Beaten Egg , mixing .until well blended. Roll paper thin on a floured board keeping shape rectangular. Allow to stand for 20 minutes. Roll up and slice 1/8 inch wide. Toss lightly to separate strands and spread out to dry for several hours. Makes 1/2  pound dried noodles.

Candied Orange Peel

Mom made this often around Christmas Time for us kids. I Remember it fondly.  Mom rarely got a grapefruit, for herself. As kids we didn't like them much. But she would freeze the peels off of our oranges to candy at Christmas time.


Candied Orange Peel
 
Remove the peel from 3 oranges, remove the membranes as much as possible. Cover with water to which 1 teaspoon of salt has been added. Boil for 30 minutes, drain. Cover with fresh water and bring to a boil and boil for 30 minutes or until tender.
Bring to a boil 1 cup of sugar and ½ cup of water, Then add in Orange peels. Boil gently until the syrup is absorbed. Drain, and roll in Sugar. Cut into strips if desired.
If using Lemon or Grapefruit peel, cook in 5 fresh waters before adding to the sugar syrup.

Home Candied Fruit

I found some of my Mom's recipes. These are old recipes from my child hood. 

I recall Mom making these sweets from the peels of a Lemon and a couple of Oranges that one of us kids got from Church.  Nothing went to waste in her home.


Home Candied Fruit

1 Lemon peel
2 Orange peels
1 small can sliced Pineapple
8 Oz jar Maraschino Cherries 
2 cups Golden Raisins 
1 1/2 cup Sugar


Drain Cherries 
Simmer Citrus  peels in water enough to cover for 15 minutes. Drain, cut into small bite size pieces. 
Combine all, put into large heavy skillet. Cook and stir over low heat until all the fruit is glazed and liquid is all gone. Spread out on a large plate, for a two days.  Keep in glass jar and keep in fridge until needed

Biscuits for two

I don't have a picture of these biscuits but if I ever do get one, I will post it.

With it just being Hubby and I I Need recipes that are perfect for two people. This one is easy enough and just the right amount for us for a Biscuit breakfast or something to go with dinner.


Biscuits For Two

1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons shortening
3 tablespoons milk
2 tablespoons butter or margarine, melted, divided

In small bowl, combine flour, baking powder and salt. Cut in shortening
until mixture resembles coarse crumbs. Add milk, tossing with a fork until aball forms. Turn onto a lightly floured surface; knead 5 to 6 times. Roll or pat to 1/2 inch thickness; cut with a 2 1/2 inch biscuit cutter. Place on a greased baking sheet. Brush tops with 1 tablespoon butter. Bake at 450
degrees for 9 to 11 minutes, or until golden brown. Brush with remaining butter. Serve warm.
Makes 4 biscuits.
