Good Morning, Oct 30, Oatmeal Peanut Butter Chocolate Breakfast

Good Morning

 

A cool start to the day. According to the tv we are at 36 degrees. I needed jacket for sure to take the dogs out befor Jerry left for work this morning. Today he'll work until about 2 pm.. when he gets off work we plan on doing some running around. I need to stop at walmart, then dollar general,, and before coming back home, I'll do our food shopping, I have about $ 50 to work with for grocries.. with what I have in my tub of canned goods, and in my shelfs.. that will get us through till next Friday, which is payday. After we pay our lot rent.. we will have a bit more for grocries next week.. One week at a time, right? I know I'll have to fix another pot of beans. I saw an idea I want to try. You use a food processer to chop up hotdogs really fine, then treat the meat like hamburgers and make patties out of it. You add in an egg and bread crumbs much like you would for tuna croquetts.For Today...

Outside my door ...

Another bright but cool morning. I'm wearing my sweathshirt turned jacket I made a few years ago. I think I made this in 1999. It's seen better days, that's for sure, but soo warm to wear. High supose to be in the mid 70's again today. The trees here are still turning color and holding on as long as they can. Looking forward to our walk this morning and going out with Jerry this afternoon.

 

The dogs ... Macon is sleeping on Jerry's bed, Rocky is in his kennel. He didn't want to go in when I told him to, so he's now locked in for a bit. He's been getting more and more stuborn about going all the way in, when I ask him to go to his kennel.

 

From the kitchen... Breakfast,

Oatmeal Peanut Butter Chocolate Breakfast

3/4 cup Oatmeal

1 Tablespoon Peanut butter

1 Tablespoon Butter

1 Tablespoon Honey

2 Tablespoon Cocoa

1 teaspoon vanilla

1 1/2 cup Water

 

In a medium skillet, melt the butter, then toss in the oatmeal and stir until toasted. In a good sized microwave bowl. place peanut butter. When the oat meal is nice and toasted place in the bowl with the peanut butter and stir to mix. Add the cocoa, vanilla and honey.. and mix well. Add water and stir again. Microwave for 3 mintues or until done. May add milk if desired. Serve.

Lunch, maybe a sandwich. unless I forget cause breakfast is really filling.

Dinner hasn't been planned just yet. Depends on what I can find at the store.

I'll be changing from the dress to a blouse in a bit. Most likely my Wild and Free t-shirt.

I am thinking... Of ways to stretch our budget to last the next 7 days.

I am thankful for... Jerry finding a job and enjoying his work. It's a dirty job, but he likes doing it.

I am hoping... That we can find everything we need this afternoon. so we can enjoy our stay here in Tupelo MS.

I am creating... A cleaner camper and campsite.

One of my favorite things... Morning coffee with A bit of Cocoa added to it.

A few plans for the rest of the weekend. I'm going to try my best to Spoil Jerry this weekend. I'll have the bath area all warmed up when he gets off work so he can shower off all the carbon black from where he's working.

The Campgrounds At Barnes Crossing's office

As you can see, there are lots of great things to look at on the porch. I have to remember to take my camera with me and take some close up's of what's on the porch. Lot's of flowers around the park, lots of yard art, and lot's of ideas for more crafts to make. Now, if I could just find out what smells so nice and like spice as we get to the part of the road that leads to our camper.. I'm just not sure what it is, but I love it.

Jerry got in late last night, almost 6pm.. These people he's working with want to take a day off, to go to a game. I think Jerry said he's only working to 2 on Saturday. Has to work Sunday so that everyone can have a three day weekend next weekend. What's up with that??? .. the ones from Georgia want to go home for another Game. Geesh, I'll be happy wihen Football season is done and over with !!!
As much as I love that he's working, it's best when he knows day in, day out what hours he's working. Best for him and best for me and the dogs. I remineded Jerry, he's going to have to bring me somtehintg toc cook tonight. All I have left is some cans of Chili and I doubt he wants any of that tonight. I forgot to make either corn bread or biscuits yesterday for our meal. Oops.
 
For Today... October 29, 2010Outside my door ... Sunny, nice and warm. in the mid 70's.. I didn't open the door but I had a window open for a bit. The dogs and I took two realy walks.
 
The dogs ... our walks, The first was to the stop sign. yeah, I had to pick up poo.. but the walk is worth it.. I use doubled plastic bags for the pick up. can't find the handled thing I got just for picking up after the dogs. It's not a long walk but there is a nice field, up for sale, that I can let the dogs go full lead on. Once we are past the entrance I can let them go full lead and explore the grass or side of the road. The second walk was on a trail behind us.. have to cross a wooden bridge to get there. I want to take Jerry on that trial soon so he can see it as well. Not much of a trail but it's wild and an area the dogs can explore. Also large enough I can give them the full length of their 20 foot leads. Suppose to keep them on 6 foot leads. I tye a loop into the leads much closer than 6 foot until I get to an area they can have full leads in.
 
From the kitchen... Jerry bought us deli style chicken, green beans. corn for me, baked beans for him from the Kroger Deli. Not going to ask him to do that, again. the chicken was ok.. but the rest.. yech. Neither one of us ate all of the green beans, I didn't finish the corn, and I love corn. and Jerry said I could have what was left of his baked beans. Maybe for lunch today.
I am hearing... had the tv on all day.
I am wearing... Black top, dark grey sweat pants.
 
I am reading... emails, all day long. The connection is slow, so it really takes a long time to load each email, espceall if it has pictures in it.I am thinking... What a nice camp ground this is. Linda is great and so helpful. Lots of yard art to look at. I want to take more picturesI am thankful for... Being able to get here. The trip was un-eventful and safe. So much could have gone wrong that didn't. Also thankful for Jerry not having to go on to Columbus MS. as we were not ready to do thatI am hoping... That this job does last until Feburary. Jerry told me about it when he called at 11:30. This job is just really starting up so there will be plenty of work to do.. Jerry comes home covered in carbon black and so I know I'll have to have the back of the camper warm so he can shower as soon as he gets in each night.I am creating... a clean and orginized camper.One of my favorite things... The wonderful weather we have here. I've been enjoying my walks with the dogs. I need to remember to take both my camera and cell phone. Beth got a bit paniced when she couldn't get ahold of me while the dogs and I were out on our afternoon walkA few plans for the rest of the week... Cooking, Cleaning, walking the dogs, finding our way around town.

Pinto Beans with Chili, Raspberry Iced Tea

Dinner tonight will be Pinto beans with a can of chili added to it. As a kid, there was a time when Mom was struggling to find a good job.. and when she did find one, found out it would be close to 6 weeks before she got her first paycheck.. The pay was great, but that 6 weeks... oh my. When Mom found out she got the job. she bought a 50 pound bag of Pinto beans. We had beans every night.. It was a good thing us kids were in school and on the lunch program. It gave us a varity of foods for the week. Mom also bought corn meal and flour. She would make bread on the weekends, biscuits by mid week or cornbread. I'm not even sure where we were getting milk and eggs from. I'm thinking we got them from a friend who had a cow and chickens on her small farm. It's that or Thom was buying them with the money he was making at the time. Even back then he was trying to help out the family as much as possible. I know Andy and I would go through the neighborhood asking people we saw if they needed a kid to do a job for them.. Andy got lawn mowing jobs that way. I helped clean a couple of houses. I remember sitting under a large table with a small paintbrush getting all the dust from the claw feet and from under the top of the table.

Anyway... Today I'm making a pot of pinto beans and will add a can of chili to it a bit before Jerry gets home and the beans are done. Since I found my jello stash, I'll make up some of that and add some canned fruit to it for a dessert. I'm still debating between corn bread or biscuits to go with the beans.

Most mornings, I try to copy a recipe from one of the church books I've picked up.. well, I stashed it and can't find it.. but since a recipe is a recipe, and I have a shelf of recipes in the living room, I thought I'd copy from one of the magazines I have, that way I can toss out, or pass along this one, once I get all I want out of it. here is the recipe I found right up front.

Raspberry Iced Tea
Taste of Home,
Jun/Jul 01
8 1/4 cup Water, divided
2/3 cup Sugar
5 individual Tea Bags
3 to 4 cups unsweetened Raspberries
In a large saucepan, bring 4 cups water to a boil. Stir in sugar until disolved. Remove from heat and add tea bags. Steep for 5 to 8 minutes. Discard tea bags. Add 4 cups water to tea. In another pan, bring raspberries and remaining water to a boil. Reduce heat, simmering uncovered for 3 minutes. Strain and discard pulp. Add resulting Raspberry juice to the tea. Chill in fridge. Serve over ice.

Good Morning, Tupelo MS

Hello. Good Morning ...
We are now in Tupelo Mississippi. Yea. Jerry did his orentation for the job yesterday. He even had to go through mine orentation as well. He said it's for confined spaces.. He'll be running conduit on this job. He likes running conduit. We had to move the camper from the overnight site to one that is for more permanent stays..
We got the camper moved to a different site with no problems.. At least I had no problems since I stayed and chatted with Linda at the office while one of the men who works here, helped Jerry get it backed into place.. by the time I got back he was gone and Jerry had most of the jacks down already. I helped straighten out the water hose. It has a few kinks in it and I wanted to get them out so we would have better water flow. Sometime today, I need to wrap it into a tighter coil and place it more under our camper. I'm not sure how we are going to keep it from freezing when the weather turns bad around here.
Ugh.. We were up befor 4 30. Jerry has to be at the job by 6 and I wanted to cook in the electric skillet and yesterday it gave me trouble so I wanted enough time to be sure to cook his potatoe well.. and if it didn't want to warm up, I would have just used my cast iron skillets.. the only reason I went with the electric skillet is I used it Yesterday (Wed) and just didn't want to mess with the propane just yet.
Today I'll be making a crockpot of pinto beans for dinner.. I'm leaning toward biscuits rather than corn bread to go with them.
Also today, I'll be putting everything back where I want it and cleaning up the camper. I have stuff that belongs in the kitchen in the back n the closet and stuff in the shower that belongs in the living room. A box of Dvd's that go back on the shelf and a reminder to myself that the drawers really have to be empty before we go down the road again.

JERRY FOUND A JOB !!!!

Wow.. not only do we have internet service again... JERRY FOUND A JOB !!!!

Oh yeah.. Ye Haw !!!
Just after I wrote, and right after I got off Jerry's laptop (battery ran out) My laundry was done..


As we got into the van his phone went off.. The internet card is in, come get it... oh yeah. That was the good news.. So instead of heading home. We head over to the Sprint store....

Just as we are getting into the hyway... His phone rang, again.. Not reconizing the number, I answered it. It's for Jerry. "Just a second" He's got to pull to the side of the road. WE do not talk on the phone and drive at the same time. It's a JOB !!! Jerry gets the information he needs and we get back on the road to go get our internet connection. Home, and download and print off all the paperwork. Of course it will be Monday before we can fax it back.. but that's ok. First thing Monday Morning, we will be faxing back all the information he needs. The Job starts Wed. We "should" get a refund on some of our days here in the rv park. We made a stop on the way home to pick up a plug that goes between the van and the camper, He's working on that right now. Still need to pick up a brake booster but we know a reasonalbe place to get that at, as well. It's going to be tight for the next couple of weeks. But he's going to be working, again !!!

Green Bean Salad
"From Our Home to Yours"
Ozark First Church of the Nazarene
2004
1 lb Fresh Green Beans
1 small Red Bell Pepper, diced
1/2 cup Green Onions, sliced
1/4 cup Apple Juice
2 Tablespoons Cider Vinegar
1/4 teaspoon Oregano
1/2 teaspoon Black Pepper
Wash and trim Green Beans. Cook Green Beans in lightly salted boiling water for 5 to 8 minutes or until tender. Drain. Combine the green beans with the bell pepper, onions, juice, vniegar, oreganos and black pepper. Cover and chill at least 2 hours.

Green Bean and Potato Salad
"From Our Home to Yours"
Ozark First Church of the Nazarene"

1 1/2 lbs small red Potatoes, diced into bite size pieces
10 oz Fresh Green beans. cleaned and snaped
1 cup quartered Cherry Tomatoes
1/2 cup chopped Onion
salt and pepper to taste
2/3 cup Honey Dijon salad dressing
Scrub potatoes and rinse well. Do not peel, Place in pot and cover with water. Boil over medium high heat until fork tender. Drain and rinse under cold water. Set aside.
Rinse beans under cold water. Place in pot and cover with water, Boil until beans are crisp tender. Drain, rinse under cold water.
Combine potatoes, beans, tomoatoe and onions in a large bowl. Add salad dressing and salt and pepper, toss well. Cover tightly with plastic wrap. Chill 2 to 3 hours befor serving.

My Weekend, a few pictures,

This is the hill behind our camper. I took this last week but it's not really as orange as this looks. I took this as the sun was setting and that really brings out the colors in the brush as well as the trees.

We were driving around yesterday (Sunday) and I remembered I had my camera with me.. A bit late in the trip. I decided to take a few "shots" out the window while we were going down the road.. that's why it's a little blurry.. I think this one would make a decent desktop background. I have a few others that will also be used as backgrounds on my desktop as well. Now some of the things I wrote over the weekend....

10 15 2010, Morning

Good Morning !!

It's another wonderful day, here in Alabama. Nice and cool this morning
with a high expected in the mid to upper 70's. Lot of sunshine as well. I
do have to get to the laundry soon. Maybe today, but by tomorrow for sure.
The dogs are really playful today. Part of it because Jerry is home. and
they want him to take them for a long walk. I had them out twice already,
one a walk across the drive to the hill. but they didn't really want that,
they wanted to sniff and dig and I won't let them do that. The lady behind
us has a female dog and she's walked over there all the time and so I'm
thinking my dogs are smelling where she's been. I need to take my camera out
next time I go out and get some more pictures. We are still mostly green
here, but more color is showing up. Just the edges of the leaves mostly. There
are some weed/wild flower on the hill that I want to take more pictures
off. This time without taking the dogs with me. Last time, I ended up in
another fire ants hill. only got three bites this time. We did have to run a
heater overnight to keep the camper warm but it was on low.

Today we will not be doing much at all. Jerry is still job hunting, but
it's almost impossible to find a job on Friday. We can hope for a call
though.

10/15/2001 Evening

Well, good intentions. I did walk most of what I had planned on. I was headed to the stop sign when a woman in a camper asked me a question.. of course I had to stop and talk. And was still there over an hour later. She's looking for work. Her hubby is on disability. They could not longer afford their rent on a house, so now they are in a camper. When you consider that our spot costs us, $333 a month compaired to rent around here running around $800 a month it's a lot of savings. and that includes power, water, some cable channels and trash pick up. Her little dog had gotten out, and she was hoping it would come back home. It did.. then got out again while she was taking the trash to the dumpster. At least it came when she called it. I didn't take either dog with me, this evening. I didn't want to be pulled or have to pull on either one just to get to the stop sign.. which is good cause now I have new friends. Tommy Jo is looking for work, think I said that already. She said she's never had this much trouble finding a job before. I told her last time we had this much trouble was back on 9 11. 00, When the towers came down.. And that took 18 months. I sure am hoping that it doesn't take that long this time for Jerry to find heavy construction work again. Commercial is ok, it pays the bills but he much happier with heavy construction. I didn't really think we would get a call today, but I had hoped so. Maybe Monday or Tuesday he'll get a call. Those are usually the days when calls are done with most of the construction companies.

We hope to hear by mid week, next week on the unemployment from Georgia. It's going to be squeeking, here until we know for sure.

While I was walking, one of the men from the other end, stopped and asked if I'd mail a letter off for him tomorrow. Sure, no problem, I got to go out anyway.. he not only needs the letter sent, but a stamp and an enevelope as well. That's fine. no problem.. the way I figure it.. If I do this favor, sometime in the future, someone will do the same kindness to one of our kids. He did say he'd pay me for it, but it's so little it's not worth the worry over it. like I said, I got to go out anyway. And I'm not worrying about the price of a stamp I have already got.

I'll try to walk again tomorrow evening. Mornings are so hard for me to find the right time to walk. 5 is too early even if I'm up then.. too many people are driving out of here and they are not too awake yet. by 6 I'm up but needing a shower.. by 7, I'm dry, but it's time for meds and breakfast..8 is time to take the dogs out, I'm not up to walking them very far right now. They have yet to learn not to pull. by the time they are done, I'm ready to get my house cleaning done and after that, it's too warm, or at least it was too warm, to go walking. by next week it may be better. I do want to be home between 11 and 12 cause that's when my favorite soap is on. I "can" miss it, but I hate to. So far, I've found that the best time is between 6 and 7 pm, to go walking.

Good Afternoon. We are on the warm side today, right now it's around 84 outside. I have the windows and vents and the door wide open. We have a slight breeze and that's helping to at least stir the air a bit.

I got to sleep in until 9 am this morning. I have no idea how that happened. I know I didn't sleep well or very much, but I tribute that to changing the bed around to as much as anything. The beds are back in order again and I'll have to note how well I sleep tonight. Right now, I sleep with my head South and my feet North. last night my head was East and feet West. I did try switching but that didn't seem to help any.

Jerry found the Megellon (GPS) and wanted to go find GeoCaches. That's great, only he has lots of trouble figuring the (Bleeping) thing out.. Then hands it to me,, and wants me to figure it out. This thing shows you wher you are in compairison to where the Geocache is, but it don't show you the roads to get there.. I wanted a Garmin or TomTom when we got this and I still wish we had waited until the store had the Garmin instead of setteling for what we got. We did go down a couple of roads we hadn't been down before, and it'a a very nice day to be out driving around a bit.. it was just so frustrating trying to go find this place and we would get close but the road would end before we got to it. I had my camera with us, and took a few pictures on our way back. I wish I had taken it out of my purse sooner but I had that (bleep) garmin in one hand and my cell phone in the other. Beth had texted me, and I texted her back. she texted again and I waited for her to elaborate on what she texted me. and she never did. She just wants to whine and complain about her life in general, again. Every tiime she starts in on that now, I start telling her how things are going for us, as well.. it's just a tough on us as it is on her. She better get use to it, I think. I keep trying to tell her much of her problems are her own doing but she wants to blame it on someone else when she can. Once she finally starts taking responsibility for issues she can control her life will get much better, I think. Really, there is only so much you can blame on an ex boyfriend, a job, lack of a job, and people in general.

I just went through our 30 channels and there is nothing of intrest to watch. I think, even if we had our own dish service we would be hard pressed to find something we both would like to watch on the tv right now. I was hoping he'd be able to fix my laptop so that I could just take it to the middle of the camper, when he wants to watch something I'm totally not intrested in. He knows I'm not intrested in "car" shows, not how to fix them, race them or show them, but if there isn't one of the CSI's on, or Law and Order. that's his next choice in watching. during the week, once Y&R goes off. I may as well go take a nap cause he'll find a car show to watch, when he's home.

Anyways... I am enjoying today.. Loved the riding around. and like I said, I took a few pictures from the van while it was moving so some are blurry..

Good Morning, free classes in freezing, Fruit N Cheese Desert Salad

Good Morning !!

It's another wonderful day, here in Alabama. Nice and cool this morning with a high expected in the mid to upper 70's. Lot of sunshine as well. I do have to get to the laundry soon. Maybe today, but by tomorrow for sure. The dogs are really playful today. Part of it because Jerry is home. and they want him to take them for a long walk. Fruit N Cheese Desert Salad
"From Our Home to Yours"

1 8oz sugar free cook n serve Vanilla Pudding
1 15oz can Pineapple Chunks packed in Juice, drained. Reserv Juice
6 cups Assorted Fresh Fruit
3/4 cup Light Fancy Chredded Cheese
1/4 cup Orange Juice
In a saucepan, combine dry pudding, reserved pineapple juice and orange juice to make a fruit glaze. Heat over medium heat, stirring constantly until thickened, about 1 minute. Cool. Gently toss fruit glaze with the Pineapple chunks and fresh fruit chunks. Cover and chill until ready to serve. Top each 1 cup serving with 2 Tablespoons cheese.

Hello, Corn Salad, Cranberry-Applesauce Jello Salad

Hello, I hope you are doing well. Today is so much cooler than it was this time last week. I need a light jacket for a bit. We are going into the low 70's today.

Jerry is laid off, again. I doubt he'll be called back this time to this same job. but the company he was working for may ask for him on a different job. It will be intresting to figure out how to get to it. So it's job hunting again. He's going to go to the truck stop where a new building is going in and see who has the Electrical on it. Hopefully He will hear something today on a job.. ProServe did call, but the job was way to far away for us to get to.

Today is a new day. You get another chance to do things right.

Corn Salad

2 cans whole kernel Corn, drained
4 Green Onions with tops, chopped
1 pack, Cherry Tomatoes, quartered
2 Tablespoons mayonnaise
Salt and Pepper, to taste
Mix everything up together in a bowl. Chill until ready to serve

Cranberry-Applesauce Jello Salad

2 Large (6oz) boxes Raspberry Jell-o
2 cups Cranberry Sauce
3 1/2 cups Apple Sauce
Dissolve Jerro in 2 cups boiling water. Dissolve cranberry sauce in this mixture. May have to heat a little more in the microwave to do this. Add in Apple sauce, Beat with a whisk. Add nuts if you want to. place in large casserole dish and chill.

~-~ Good Morning ~-~, 5 cup Salad, Cool Dinner Salad

Good Morning,

It's 6am here, and I've already taken the dogs outside. You don't need an alarm clock whtn you have a couple of dogs in the house. They know what time it is. It starting to get foggy outside this morning. I couldn't see the end of the driveway very well, just where all the lights are, and they are fuzzy.

We got rain last night. Don't know how much since I havn't turned on the T.V. yet, and I don't have a rain gauge here. We had a lot of wind right before the rain got here. There are lots of leaves on the ground but it's too dark to tell if they are green or leaves that were ready to fall off of the trees anyway. The tops of the weeds on the hill are all bent over, the wind was that strong. The storm got here, right before Jerry left for work. We both stood outside and watched it coming in, and stood were we could feel the wind. Watching it blow the dust from one end of the road to the other. Watching the trees on the top of the hill weaving and waving and twisting in the wind. The dogs now have to reclaim their turf. All their scent has been washed away. I'm sure all the boy dogs here will be very busy fellows.

The neighbor across the way and down 5 campers was out playing with her dogs when I took ours out last night. She didn't think and tossed the ball for her little dog, towards our camper while I was trying to settel our dogs down. Which, of course may our dogs want to play as well.. The first time I could understand as she may not have seen us. But the second time. Come on.. my dogs are barking and going crazy because they want to play. Oops. She handed her dogs off to her hubby and came over, which just made my dogs more hyper. Yikes. Macon finally setteled down but I had to put Rocky in the house, and Jerry had to put him in his kennel because he woudln't settel in the house. But Pracilla and I talked for about an hour. more than long enough for Macon to want to lay oll over her. (Macon is the big dog) She did appoligize for the second time she tossed her ball our way. She said she just didn't think about because she's never seen us throw a ball for our dogs. We don't usually have room to do that here on our side, and besides, even if we had three balls (for two dogs) they would just argue over the top of the ball and not bring any of them back. Inside is a different story. They will chase a ball in this 32 foot camper (with a narrow hallway all the way down the middle) and bring it back. a few times usally, but outside is a totally different story. Out there, they know they are allowed to wrestle, so they use any toy at all for an excuse to.

Well the bad news. ... Jerry worked 6 hours last night and is off work again. Not going back in tonight but may be called back, yet again. This is crazy. either let him go or keep him or not. He'll have to make a few phone calls this morning and we will have to go to the Career center, again.. he'll have to use their phone to wait for Georgia un-employment to answer their phone. from my understanding. Georgia has two people to handle all out of state claims. So it takes a while for one of them to answer the phone. Better to use the phone provided by the state at their office than wait half an hour or more on our one phones. I was sure hoping that this job would have lasted longer. This weeks pay will only have 30 hours on it, maybe. next weeks about the same. I'm still praying that KBR will call Jerry to the job that is starting up in Columbus Mississippi. That is only about 80 miles from here. We could easily move there and be closer to the job, with this camper, after he commutes for two weeks and we get that first paycheck.

1 cup Nuts
1 cup Sour Cream
1 cupd flaked coconut
1 cup White Grapes
Mix all together and chill several hours. Keeps well so you can make it ahead of time.

Cool Dinner Salad
"From Our Home to Yours"

2 cups penne Pasta
12 oz Tuna, water packed
1 medium Bell Pepper, diced
1/2 yellow or red Onion, diced
4 hard boiled eggs, diced
1 medium Tomato, diced
1 small Cucumber, diced
Croutons for garnish
Dressing
1 1/2 cups Mayonnaise
1/2 cup seasoned Rice Vinegar
1 teaspoon Paprika
1 teaspoon black or white Pepper
1 teaspoon Garlic Powder
Cook pasta as directed on the packaging. Drain in colander, place colander in bowl of ice wter to cool pasta. Gently mix tuna, cucumber, bell pepper, tomato, onion and eggs. In a seperate bowl combine dressing ingredients until well blended. Add pasta to tuna and mix. Pour dressing over salad and fold until coated. Serve on top of greens. Sprinkle with cheese and garnish with croutons. makes 4 large servings.

I have to write. That I am so thankful for a very quick thinking son, back in 1996. He woke us all up around 4 am when the trailer we were living in, caught fire. He still has no idea what woke him up, but he was able to yell fire and get us all out of the place.



Outside my door ... (9am) Cottage Cheese clouds. Maybe we will not get too hot in here today.. although, the high is suppose to be around 90 and may break the all time records for this area. I'm ready for cooler weather.

For Today... October 7, 2010. Cherry Salad

For Today... October 7, 2010.
Jerry helped the young man next door (finally) find out where his water goes in at. and found out that he has an adapator on his camper that can be removed so he can put on the hose to dump both grey and black water from his tanks. Jerry says the electrical is ok.

Very nice now that the sun has topped the trees We may have to turn the air back on by this weekend, yuck.. I mean really.. in October? I sure hope all this heat now means we will have a mild winter if we have to spend it here.
 
The dogs ... Got to be petted this morning by the fellow next door and his friend.. Hey, very little jumping.. the dogs loved it.
 
From the kitchen... Hamburger in boxed dinner, Salad, angel food cake
I am hearing... (930) Not much. don't have the tv on right now.. will turn it on in a bit for "The View".
I am wearing... dark grey sweatpants and a light purple top, (no logo on it)I am thankful for... Jerry. He takes care of me. He went and helped the guy next door. He's willing to share his Tradesman with the fellow behind us.I am hoping... That Jerry gets a call for a job today. stressing out over lack of work .

1 14 oz can Sweetened Condensed Milk
1/2 cup chopped Nuts
1 8 oz carton non dairy Whipped Topping
1 cup mini Marshmallows
Combine all ingredients, blending well. Place in glass serving dish. Chill well before serving. makes 6 to 8 servings.

For Today... October 6, 2010, Asparagus Pasta Salad

For Today... October 6, 2010
Well, Durn it... it's getting to the point that I am not liking my birthday. Last year, two days after my birthday, Jerry got laid off. This year it is one day after. Yep, he's laid off again. He made a phone call to the temp service he's hired thorugh and the man can't do anything until tomorrow since he's out of the office today. What's up with that.. There will only be 2 days on next weeks check.. we can not survive on that. Grrr. Jerry can't even apply for unemployment until he gets the paperwork in. And that will take at least three days to get sent here. We are ok for now. Cutting back even more than we already were. example. Yesterday we debated wether or not to add a can of Chili to our dinner of burritos, salad and cake (left over from my birthday. We decided to save it to fix over Mac and Cheese for another meal, later.Outside my door ... (8am) The sun is not over the top of the hill just yet. Once it is, the camper will warm up nicely. Today's high is going to be around the mid 70's today. With Jerry off work, I don't know just what we will do, today. Maybe take the dogs over to the golf course and walk them a bit. that would be nice. We could even finally have our picnic I've been promised all this past summer.
 
The dogs ... Are driving Jerry nuts this morning. they want him to take them out and stay outside. One of the cats is out there, teasing the dogs that it's free and they are on lines. We had two new campers come in and the cat is over there looking for handouts already.
Ut oh. Rocky is in big trouble. Both dogs shot off after a cat, got loose, Macon came right back but Rodky didn't want to come back. Now he's "grounded" in his kennel for a while.

I am hearing... Got the Early Show on. Jerry just started up his computer so I'm hearing it boot u and we have a heater on to break the chill. We are both in layers this morning.
I am wearing... (8am) My blue long housedress, and my maroon housecoat over it. I'll be chaning clothes here in a bit. (10 am) got my shower and now wearing brown sweat pants and light blue Eagels Nest tshirt.
 
I am reading... emails, my Bible and some recipes.I am thinking... We havn't gotten much ahead this past year. We are still doing ok though. We own the camper. Have only a few bills and we still wake up breathing each morning. That's doing good, in my books.I am thankful for... I am hoping... Jerry gets back to work very soon.I am creating... A good Attitude.One of my favorite things... Sleeping in, when the dogs will let me. We were up by 6:30 cause the dogs needed out.

Asparagus Pasta Salad
"From Our Home to Yours"
Ozark First Church of the Nazarene
2004
1 small Shallot, finely chopped
1/3 cup Olive Oil
1 lb Asparagus, thin spears
1/2 lb Bow Tie Pasta, cooked to Al Dente and cooled
1/2 c Frozen green Peas
1 Tablespoons Dried Parsley
3 Tablespoons White wine Vinegar
Salt and Pepper
heat shallot and oil in small pan over medium hear for 5 minutes. Set aside and allow to cool back to room Temperature. Hold One spear of asparagus at each end and snap it. The spear breaks wher the tender tops meet the tough bottoms. Line the brokne spear up with the reso fo the bundle of cleaned asparagus and cut, using the broken spear as a guideline. Par boil the Asparagus tops in ine inch of simmering water, covered, for 3 to 5 minutes. Cool under cold running water and drain. Cut cooled Asparagus into 1 inch pieces on an angel and add to a large bowl. Add to the bowl the red peppers,cooked pasta, peas and parsley. The peas will defrost as you toss the salad. Pour vnegar into a small bowl and wisk in the cooked shallot oil. Pour over salad and toss. Season with Salt and Pepper to taste, then Toss again.

my Birthday

We started off this morning at around 43F.. That's cold, to me. Jerry said he's only a little cool. Yet he got the sweat shirt I washed over the weekend out and is wearing it. The high is prediceted to be around 68,this afternoon.
What a way to start off my birthday. I was dropping things while trying to make Jerry's breakfast. Now I have to get up and do the dishes. I think every dish we have is dirty, this morning.
I spent about 45 minutes outside with the dogs this morning. I had trouble getting the dogs to play with the ball. They did want to play but they didn't want to play with me. Rocky slipped off his collar (again) and it was a bit before I even noticed it. Next time we go out, I'll just hook to his leather collar and forgo the chain one, for now. He really needs a smaller chain anyway.
Been working on the dishes. letting them drip dry takes soo long. I have my third dishpan of them soaking now. I'll be setting up some seasoned buttermilk to use for the chicken here in a bit as well. Not sure just which herbs and spices I want to use just yet. I'll season the buttermilk and the flour I use to dredge the pieces in. I found two chicken breasts for reasonable. I do need to clean them up a bit. they are not boneless or skinless. I may toss the skin and bones and what I can't use, in a small pot and make chicken broth with it.
I found two emails from my Brother Thom... wishing me a "Happy Birthday !!"
one of which he said he wished he could be here with me to help eat the Cake he "Knew" I was going to make.
(11:45) Jerry just texted me "Happy Birthday" I texted back "Thank You !!!".
Jerry called me during his lunch break as well.

I got a voice message, two of them really. Both Grand kids wished me a "Happy Birthday.

Heather called to wish me a "Happy Birthday". The Grandkids had to wish me again. Corbin got the phone and took off with it. I got to hear the tv and him being yelled at to "bring it back". At least this time he didn't hang up on me. There was so much noise at Heathers. As a typicial working Mom, she was being pulled in several directions at the same time. The Cheer Team had their team picture taken yesterday. I hope to be able to get one, when they are ready. Heather was so busy that she promised to call me later when it was less noisy at her house.
Dinner was the Chicken, cut off the bone, stripped of the skin and cut into large chunks. For the first time in a long time. I had more than I could eat. I soaked the pieced in seasoned buttermilk. then dredged in seasoned flour and fried in hot oil in my largest skillet. It was still two batches off of two breast halfs. Fixed Mashed potatoes as well as Salad. The cake came later and with a bit of vanilla ice cream was the perfect ending of dinner.

A bit of this, a dab of that.

That's what today's been like so far. A bit of cleaning. A dab of crafting.
Jerry made breakfast this morning. Fried Potatoes and a ham and egg omlette. Delish.
 
Jerry took the air conditinor out of the bedroom window. Then, after putting the handles back together, also sprayed the latched so I can lock the window in place. While we were at it, did the back window slides, hinges and handles as well. We will take it to storege soon.
Sat outside with the dogs for a while. Nice out.
Mary Called.
Read Josh's blog as well as a few others. I thought he knew Tommy was dead. I figured his Mom would have told him since it was her, who told me a couple of years ago.
I took the last small aloe out of the pot. shook the soil into a dish pan and set it the sun to try out. I'll be picking what roots and junk I can find out of it in a bit. I wanted the soil dry. I'll be putting it back into the pot so I washed it out while I was at it. That got me to thinking the dog kennels needed washed to I took them apart and put them outside, sprayed water into them. dribbled in a bit of cleaner then let them soak a bit, in the sun. Found a small terracotta pot I knew I had. spray painted it silver, 2 coats, letting it dry between each coat. then just a spritz of gold to break up the brightness of all that silver. Once It's good and dry, I'll hydrate the soil plug that came with the pot and then repot the aloe into that smaller pot. I'll use the larger pot for my Africian violet that I have. It's outgrown it's small pot.

Friday. Mini Meatball Soup

Hello again.

Usually, we eat out on Friday's. I don't know if we are eating out tonight or not, just yet. Not any plans for the weekend, that "I" know of. We will do what Jerry wants to do. Of course, we have to do shopping and laundry, but beyond that, I have no idea what we are going to do.

Mini Meatball Soup
"From Our Home to Yours"
Ozark First Church of the Nazarene
2004
2 tablespoon Olive Oil
2 Carrots, peeled and chopped
2 celery stalks, chopped
1 medium Onion, chopped
2 bay leaves
Salt and Pepper
2 cup Water
1 1/2 cup Dried Pasta
1 lbs Ground Meat
1 egg, beaten
2 cloves Garlic, minced
1/2 cup Parmesan or Romano Cheese
1/2 cup plain Bread Crumbs
1/2 teaspoon Nutmeg
6 Cups Chicken Stock or Broth
1 lb Fresh Spinish, coarsely chopped
In a deep pot over medium heat, add oil, chopped carrots, celery, onions and bay elaves. Season with salt and pepper. Cover pot and cook vegetables 5 - 6 minutes, stirring occasionally. While vegetables cook, combine mean, eggs, garlic, cheese, bread crumbs, salt, pepper, and nuteg. Uncoverpot and add broth and water to pot. In cease heat to high and bring to a boil. After soup boils, reduce heat and start to goll meat mixture into small balls. dropping them straight into the pot.When you are done rolling the meat, add pasta to the soup and stir. Cover and simmer soup for 10 minutes. When Pasta is tender, slip in chopped spinach. When spinach has wiled into the soup the doup is done and ready to serve.
