Microwave Breakfast Cookie in a Mug
Enjoy a power-packed, protein-filled breakfast in just minutes with my Microwave Breakfast Cookie!
 
Ingredients
 
½ medium banana
1 ½ tablespoons peanut butter
½ tablespoon honey (or agave)
1 tablespoon milk
4 tablespoons oats (rolled or quick oats)
1 tablespoon raisins (seeds or nuts)
Instructions
In a large microwavable mug mash the banana well with a fork.
Stir in the peanut butter, milk and honey and mix well together.
Add in the oats and raisins and stir until combined.
Microwave for 45 seconds - 1 minute or until firm to the touch on top. (Cook time is based on my 1200 watt microwave so your timing may vary)
Enjoy warm!
Recipe Notes
You can mix this mug cake up the night before and cook it off in the microwave
Cooking time will vary greatly depending on your microwave and the width and depth of the mug. The mugs I use are small, roughly 6oz (¾ /1 cup)
Always keep a close eye on your mug while in the microwave so it doesn't over flow or over cook.
You can add in seed or nuts also

Crock Pot Recipes

Crock Pot Chicken Alfredo
This delicious Crock Pot Chicken Alfredo is a long-time family favorite of one of my dearest friends.
Ingredients
·       1 lb boneless, skinless chicken breasts
·       ½ quart heavy cream
·       2 tbs butter
·       1 cup of Parmesan cheese, grated
·       Salt and pepper to taste
·       ½ box of your favorite pasta, cooked
·       Optional: extra grated Parmesan cheese
Instructions
1.     Spray your crock pot with cooking spray
2.     Place your chicken in your crock pot
3.     In a pan on the stove, heat your cream through and reduce
4.     Add butter and cheese and stir until melted
5.     Salt and pepper to taste
6.     Pour your alfredo sauce over your chicken
7.     Cover and cook on low for 4-6 hours
8.     Serve over cooked pasta with fresh grated Parmesan cheese

Slow Cooker Meatloaf
2 lbs Ground Beef
2 eggs
2/3 cup quick oats
1 pkg dry onion soup mix
1/2-1 tsp liquid smoke
1 tsp ground mustard
1/2 cup ketchup, divided

1.Combine ground beef, eggs, dry oats, onion soup mix, liquid smoke,
ground mustard and all but 2 Tbsp of ketchup. Shape into loaf and
place in slow cooker.

2. Top with remaining ketchup.
3. Cover. Cook

Crock Pot Magic Dinner
This is extra good. Love this especially in cold weather.
Ingredients:
·       8 oz. lean meat, cubed
·       2 cups canned tomatoes
·       2 bouillon cubes
·       3 cups water
·       4 cups bite-size vegetables, Ex; Carrots, celery, onion, potatoes, turnip etc.....
·       2 cloves garlic
·       1 tsp. thyme
Directions:
Brown meat or chicken in frying pan. Remove to crock pot. Sprinkle veggies (fresh or frozen), including tomatoes, around meat. Mix garlic, thyme, bouillon cubes, and water and pour over food. Cook at low setting for 8 hours. Serve over rice or noodles.
Servings:8
Prep Time:20 Minutes
Cooking Time:8 Hours

Crock Pot Chops-n-Gravy

6 pork chops
1 onion, chopped
3 Tbsp. ketchup
1 (10 3/4 oz.) can cream of chicken soup, undiluted
2 tsp. Worcestershire sauce

Brown chops in a skillet and put in the bottom of a slow cooker. Combine the onion, ketchup, soup and Worcestershire and pour over the chops. Cover and cook on low for 8-9 hours or until chops are tender. Good served with rice, noodles or potatoes. Serves 6.

Crock Pot Sloppy Joes

3 lbs. ground beef
1 to 2 onions, finely chopped
1 green bell pepper, chopped
2 8-oz. cans tomato sauce
1 c. water
2 pkgs. sloppy joe seasoning mix
2 Tbsp. brown sugar

Brown ground beef in skillet. Drain. Place browned ground beef into a crock
pot.

Add remaining ingredients and stir well. Cover and cook on LOW for 8 to 10
hours or on HIGH 3 to 4 hours.

It is hard to phantom just how long it has been since I last wrote to this blog.

Liam is in Daycare/Preschool and loving it.
The senior Center closed last year, arch because of COBID. Opened this past mid April for 4 hours a day but not card playing, just talking and seeing each other across a table. Opened up full time July 6th for meals and card playing, Pending any changed that may come either through the State government and the Health Department.
We watched the July 4th parade, which was on the 3rd because Independence day was in a Sunday.
I broke the Greater Tubular area of my left arm on April 14, Had my Gaul Bladder removed on May 24. 

That's the bare bones of our year. so far.
 I'm keeping the Hummingbird feeder filled with Sugar Water for the little buggers. It also attracts Wasps, bees and other stinging critters, but so far (Knock on wood) no one had been stung.  I was not able to put in a garden this year. Just too many things to be able to physically get that done, this year.. but I am saving seeds for next years gardening.
I am painting a surprise for my friend, Barbra... it's a butterfly puddler, for when she moves into her "house" that her son is refurbishing for her.
