Banana Bread

 
Banana Bread

5 Tablespoons Butter
1/2 cup Sugar
1/2 cup Brown Sugar, firmly packed
1 large Egg
2 Egg Whites
1 teaspoon Vanilla
1 1/2 cups mashed ripe Banana
1 3/4 cup all-purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/4 teaspoon Baking Powder
1/2 cup Heavy Cream
1/3 cup Chopped Nuts
Preheat oven to 350F. Spray bottom only of a loaf pan with cooking spray
Beat butter in a large bowl with an electric mixer until light and fluffy. Add sugar and brown sugar, beat well. Add, egge whites and vanilla. Beat until well mixed. Add mashed bananas and beat on high speed for 30 seconds.
Combine flour, baking soda, salt, and baking powder in a medium bowl. Add flour mixture to teh butter mixture alternating with cream, ending with flour mixture. Add nuts to batter, mix well.
Pour evenly into a prepared loaf pan. Bake until brown and toothpick inserted near the middle comes out clean, about 1 hour and 15 minutes
Cool for 10 minutes in the pan. Remove from pan and cool completely.
