Spinach and Cheese Cakes

Spinach and Cheese Cakes

2004

2 Packages Frozen Chopped Spinach
3 Tablespoons Olive Oil, 1 for Onion and 2 to fry cakes in
1 small Onion, chopped
1/2 cup Bread Crumbs
1/3 cup Parmesan Cheese
1 Egg, beaten
1/4 teaspoon Nutmeg
Salt and Pepper
 
Defrost Spinach in Microwave (or your prefered way) Wring spinach dry by placing in a kitchen towel andtwisting it over a sink until all liquid is gone. (Will turn your towel green). Place spinach in a bowl. heat a non-stick skillet over medium heat, add oil and onion and saute until the onion is soft, about 5 minutes. Add onion to the spinach and return pan to stove top. Turn off for now. Add remaining ingredients to spinach and combine with a fork, then form into 3 inch patties. Heat 2 Tablespoons in oil in the pan you used for the onion and set cakes in to cook. Cook Cakes 3 minutes on each side.
