3 Ingredient Peanut Butter Fudge

Jerry Loves Peanut Butter fudge. I am always on the look for "new" recipes for this as I just can not make it like his mother did.

3 Ingredient Peanut Butter Fudge

2 cups sugar
1/2 cup milk

Put above ingredients in saucepan, and stirring constantly,
watch for this to come to boil.
Time it at slow boil for 3 min. exactly.
Remove from heat, and stir in quickly:

1 cup peanut butter (chunky or smooth)

Immediately, pour into buttered dish, let cool slightly and cut into
squares.

I hope you slept well last night.
 
We got the laundry done yesterday. and Jerry got his check so we did a bit of running around. looked for 4 GeoCache's and found one. One that we had looked for, before.
 
Not sure what the plans are for today.
 
So far today, I've walked the dogs, and let the kittens out of the kennel.
 
I do know that Jerry will be making a few phone calls here in a bit. looking for another job.
We'll pay the lot rent, at least for a week. And after that, we may do the food shopping for the week. Not that we need much, as I've tried to stock up a bit, for a couple of weeks at least.

For Today... Jan 26, 2011

Good Morning.
Jerry is working, at least this morning. The Project Manager is suppose to be in this morning. He's supposed to have been in the last three days. Jerry's supervisor is hoping to have Jerry and himself stay here until the doors are installed so we all don't have to move the campers, only to return in a week or two (or three) Not sure just what is going to happen. But it does say well that the man who Hired Jerry is very happy with his work, since he's trying to hard to keep Jerry working.
Jerry got off at 3:30 yesterday and wanted to go out to eat. We had Little Abner's Chicken strips. I got the grilled strips and Jerry got the deep fried. Both are great. Jerry took the left overs with him to work for lunch, today. I had ordered the 5 piece chicken strip dinner and I could only eat 3 of them. I ate a few of the fries but I almost always give Jerry over 1/2 of my fries and this was no exception. I did eat the small thing of Slaw (It's vegetable, is about all I can say for it, I've had better)
I had to go out anyway. We were out of dog food. I picked that up, along with a can of nuts, some glue, Artifical sweetner and some dehydrated mixed berries to put in my oatmeal, this morning. (and a few more mornings as well)
I'll be cleaning house, working on a swap, and waiting to find out how long Jerry works today.
Outside my door ... Ah, no snow last night. We were expected to get up to 4 inches of it.. and got nothing. I'll take it. I wish those up north to be as lucky. Today we may even get some sunshine. if we do, the dogs and I will be taking a few walks just to get out and enjoy it.
The dogs ... Are trying to sleep. Kittens are trying to keep them up.
Macon just changed beds. and ended up pushing one of the kittens off the bed.. only for the kitten to turn around and jump back up on the bed. almost under his nose. Of course this will go on for about an hour, off and on.. or until either the kittens get bored or one of the dogs gives a "warning" that he's had enough.
The Kittens ... are teasing the dogs. Jumping from bed to bed, under their noses. rubbing up and down each dog's face, purring. Then jumping to the other bed, only to jump back and purr some more. Now they are racing down the hallway.. Oops... that bathroom floor is wet and cold.. BRAKES.. turn and run back.. trying to shake the damp off a foot along the way. Back on the bed and swat at a nose with the wet foot. back off the bed, on the couch, to look out the window. Back to the beds. chasing and jumping on each other along the way.

Impossible Lasagna Pie

1 lb, Ground Beef

1 teaspoon Oregano Leaves

1/2 teaspoon Dried Basil leaves

1 can (6oz) Tomato Paste

1 cup shredded Mozzerella Cheese

1/2 cup small curd Cottage Cheese

1/4 cup grated Parmesan Cheese

1 cup Milk

2/3 cup Bisquick Baking Mix

2 eggs

1 teaspoon Salt

1/4 teaspoon Pepper

Heat over to 400F. Grease a pie plate (10 x 1.2 inches) Cook and Stir beef over medium heat until brown, drain. Stir in oregano, basil, tomatoe paste and 1/2 cup of the mozzarella Cheese. layer cottage cheese and parmesan cheese in plate. spoon beef mixture over top. Beat milk, baking mix, eggs, salt and pepper until smooth. (14 seconds in blender or 1 minute with hand mixer) Pour into plate. Bake until knife insered between center and edge comes out clean. 30 to 35 minutes. Sprinkle with remaining cheese. cool.

I am hearing... Morning news and the kittens playing, jumping off the bed onto each other.. oh.wait.. one small piece of dog food is now a kitty hocky puck.. We found 5 in the bathroom last night.Back down the hallway,, with the dog food being chases as it's batted around.
I am wearing... Will be wearing, brown sweat pants, and tshirt. I don't think I'll need much more than that today. but if I do, I have a sweat shirt I can put on, light blue.
I am reading... Oh Drats.... I left my books in the van. Found a hymal, An Ann McCaffery book and i forget the last book at the local Goodwill Bookstore. Man, how could I forget to get them out? No cookbooks this time. I need to go though all of these first.

Good Morning.
Jerry is still working, at least for today. Not sure what happens after today, though.
We woke up to rain and we will have rain all day, according to the weather man.. and we have a good chance of about 4 inches of snow overnight tonight.
Not sure what I'll fix for dinner tonight. I have some ground pork down that needs to be used so I'm thinking of that in some tomato sauce over noodles.
I think we have another water leak. Jerry worked on it last night, but the floor is still wet back in the back. And I think it's getting wetter. So, once Jerry gets off work, he'll have to fix that.
The dogs are much like me and don't like to walk in the rain.  I took them out at 6 and they were quick to "get done" and then back into the house.  Next walk should be around 10 am. This same storm system is hitting the North East with a lot of snow. I'm glade we are in the south this year.
Beth called me yesterday. Not much going on. Just touching base.
Outside my door ... (7AM) Rain, rain and more rain.. then snow tonight. yuck.

For Today... Jan 24, 2011
Good Morning.
Well. yesterday was buzy. We went out for Breakfast. Nothing unusual about that, I'm sure. But after breakfast we decided to recheck a few of the geocaches we had looke for before.. found 3 for 3. yea !!
I had suggested that we visit the Antique Car museum for a couple of weeks now. And we went.. I think we got our $10 worth. The Muscel Cars are in. Jerry had a blast. Before you ask if I had fun.. well yes.. but I'm not a car fan per say.. As long as it has four wheels on the ground and one that fits in my hand, a car is a car. I can't tell a Dodge from a Ford, to be honest about it. But I saw some great, unusual and unique cars while we were there. I didn't pick up any post cards though. It did reminde me of a couple of stories my Mom told me.
The local Doctor and my Great Grandfather had a dispute about who got the first car in the area. GGP ordered his first. But the Doctor recieved his first. Seems being a "Human" doctor has it's privledges when it came to shipping. Don't get me wrong. The men were friends. And were know to consult with each other as well. Of course.. GGP would always tell his friend.. now if it was my patient, I'd recomend putting it down. Great Grand Paw Raised mules for a living and he was also know for his skills in healing even the most sick of them and bringing them back to good health, if possible.
The other story involves my Grandmother's sisters. Back when Cars looked more like Surry's, you know the open sides and only a canvase cover for a top, If Sister's were visiting the farm and saw each other at opposite ends of the dirt road. would "Race" as fast as possible to cover as much road as possible so that the other sister had to ride the rest of their trip in dust. Depending on who was telling the story determended who had won that race.
And of course.. one more on my G-Grandfather.. Sure he ordered the first car, but he didn't drive it.. Seems that the first and only time he drove it.. he was heading for the barn and he holloer Gee, then Whoa.. and the durn thing didn't do either. He had Uncle James teach my Grandmother how to drive and she used the hand controls. When Mom turned 11 or 12, he had that same Uncle teach her how to drive and they had to put blocks of wood on the pedals to she could reach them. That was befor the adjustable seats came in cars.

Outside my door ... (7am) It's raining. Sure beats snowing, though. We may reach the mid 50's. I heard that GulfPort Mississippi may even reach 60F today. I'll take rain over snow almost any day.
The dogs ... Are now sleeping. They had A busy morning with the kittens. A few chases up and down the hallway, can wear a dog out. Poor Macon, he's too large to turn quickly and ran into the wall in the back a couple of times.. the kittens runnin back out, under his feet.
The Kittens ... Are now sleeping as well.. after a very busy morning of jumping bed to bed to wake up the dogs, chasing each other up and down the hallway. jumping over Rocky or running under Macon. then running and jumping onto the couch, to look out the window. Then back down the hallway, under Macon, who tries to turn and run with them.. only to trip over his own 4 feet. Up in the bathroom window to look out.. back to the kennals th bat at each other though the open door. back down the hall, over Rocky, under Macon. chasing a ball. and do it over and over again for 45 minutes.
From the kitchen... Roast today. I found roast on sale this week. I picked up two of them. I can cut each in half for just the two of us and get 4 meals out of them. With potatoes, carrots and green beans a full meal from the roaster oven.
I am hearing... Morning News (Jack Lalanne died) the fan on the heater and a kitten beside me, purring.
I am wearing... Dark Grey sweatpants and a purple flowered top
I am reading... emails. I hope to read in my "exiles of virgina" today.

1 (3/4 oz) Pistashio Instant Pudding
1 (20 oz) can Crushed Pineapple and juice
1/2 cup mini marshmallows
1 9oz carton Whipped topping
1/2 cup Pecans or walnuts
 
Sprinkle pudding mix over pineapple and mix well with a spoon. Pour rest of ingredients in and stir again. Pour into a 13 x 9 x 2 inch glass or plastic pan, chill before serving.

Turkey Pasta Salad

1/2 lb smoked Turkey breast, cubed
2 cups rotini Macaroni
2 medium Zucchini, cut in julienne strips
2 cups Broccoli
1 cup sliced Carrots
1 cup Cherry Tomatoes, halves
3/4 cup light Caesar Salad Dressing
1/2 teaspoon Coarsely ground Pepper
 
Cook macaroni in boiling water for 10 minutes. Add broccoli and carrots and cook until macaroni is tender, about 2 more minutes. Toss with half of the salad dressing and sprinkle with 1/4 teaspoon pepper. Layer turkey, zucchini and tomoatoes on top of macaroni mixture. Drizzle with remaining salad dressing and sprinkle with remaining 1/4 teaspoon pepper. Cover with plastic wrap. Chill at least 2 hours or over night.

Vegetarian/Vegan Cassoulet

Vegetarian/Vegan Cassoulet
Vegetarian Cassoulet by Gourmet Magazine, March 2008

Ingredients:
3 medium leeks (white and pale green parts only)
3 medium carrots, halved lengthwise and cut into 1-inch-wide (25 mm) pieces
3 celery ribs, cut into 1-inch-wide (25 mm) pieces
4 garlic cloves, chopped
1/4 cup (60 ml) olive oil
4 thyme sprigs
2 parsley sprigs
1 Turkish or 1/2 California bay leaf
1/8 teaspoon (2/3 ml) (1 gm) ground cloves (next time I would omit this... I'm not big on the taste of cloves)
3 (19-oz/540 gm) cans cannellini or Great Northern beans, rinsed and drained
1 qt (4 cups/960 ml) water
4 cups (960 ml) (300 gm) coarse fresh bread crumbs from a baguette
1/3 cup (80 ml) olive oil
1 tablespoon (15 ml) (12 gm) chopped garlic
1/4 cup (60 ml) (80 gm) chopped parsley

Directions:
1. Halve leeks lengthwise and cut crosswise into 1/2-inch (13 mm) pieces, then wash well.... leeks are quite filthy. I knew that I would be cutting my vegetables in smaller pieces to accomodate my vegie hating husband so I just separated the leeks. Remove from water and pat dry.
2. Cook leeks, carrots, celery, and garlic in oil with herb sprigs, bay leaf, cloves, and 1/2 teaspoon (2½ mm) each of salt and pepper in a large heavy pot over medium heat, stirring occasionally, until softened and golden, about 15 minutes. Stir in beans, then water, and simmer, partially covered, stirring occasionally, until carrots are tender but not falling apart, about 30 minutes.

3. Preheat oven to moderate 350°F/180°C/gas mark 4 with rack in middle.
4. Toss bread crumbs with oil, garlic, and 1/4 teaspoon (1¼ ml) each of salt and pepper in a bowl until well coated.
5. Spread in a baking pan and toast in oven, stirring once halfway through, until crisp and golden, 12 to 15 minutes.
6. Cool crumbs in pan, then return to bowl and stir in parsley.
7. Discard herb sprigs and bay leaf. Mash some of beans in pot with a potato masher or back of a spoon to thicken broth.
8. Season with salt and pepper. Just before serving, sprinkle with garlic crumbs

I adapted this from a recipe I found in a cooking magazine that called for white rice and chicken thighs. I found that chicken breasts and par-boiled brown and wild rice worked great! This is a sneaky way to get kids to eat veggies because the rice is made with carrots and mushrooms.

Serves 4

1/4 cup wild rice
3/4 cup brown rice
2 cups chicken broth
1 tbsp olive oil
4 boneless skinless chicken breasts, pounded thin
Salt, pepper, garlic powder
2 carrots, thinly sliced
1 small package button mushrooms, thinly sliced
1 large onion, finely diced
2 cloves garlic, chopped
1/4 tsp salt
pepper
1/4 cup sherry cooking wine, or regular wine
1/4 cup half and half
1/2 cup plus 3 tbsp chicken broth, divided
Parmesan cheese

In a small saucepan, combine the rices and 2 cups chicken broth. Bring to a boil, then cover, reduce heat to low and simmer 30 minutes. Meanwhile, heat 1 tbsp olive oil in an oven-proof skillet (one with a lid). Season chicken with salt, pepper and garlic powder. Brown chicken on both sides, then set aside. Add the carrots, mushrooms, onions and 1/4 tsp salt to the pan. Sautee until all of the liquid is evaported from the veggies and browned bits begin to form on the bottom of the pan. Stir in the garlic and black pepper and cook one more minute. Deglaze the pan with the wine. Add the half and half and the 1/2 cup chicken broth. Stir in the rice and mix well. Spread rice mixture evenly on bottom of pan. Place chicken breasts on top of the rice and drizzle the 3 tbsp chicken broth over the chicken. Sprinkle with parmesan cheese. Cover with the lid of the pan. Bake in a 375 degree oven for 30 minutes. Remove lid and bake 5 more minutes. Remove from oven and cover again. Allow to sit for 5 minutes, to make sure rice doesn't stick in the pan.

Amazingly Simple and Delicious Homemade Hot Chocolate

I am seriously addicted to this hot cocoa recipe. It's so easy to make and tastes amazingly rich, even when made with fat free milk. It's perfect by itself or served with some crisp cookies.

Serves 2

2 cups milk (I used fat free)
1 tbsp cocoa powder
1/2 tbsp sugar
1/4 cup semisweet chocolate chips
1/2 tsp vanilla

Whisk together the milk, cocoa powder and sugar in a sauce pan and heat until steaming. Remove from heat and add the chocolate chips and vanilla. Whisk until the chocolate chips are melted. Enjoy

Well, I finally was able to fix that boxed meal I've been talking about.  It's nothing to write home about. But it does give me an idea to make it my way.
 
I can buy frozen hashbrown potatoes, add in my beef and seasonings and add my own cheese sauce or use Cheese Whiz, and I think I'll try baking it in the roaster oven I have.
 
I think I'll try this, this next week.
 
Jerry liked the boxed meal, though. I'm just not thrilled with it much.. the seasoning had too much onion and not enough garlic.

snow last night

we got a good trace of snow last night. on the grass that is. All the roads are clear. Jerry and I were out the whole time it was snowing. I loved driving around in it. We went into walmart and someone asked if it was snowing yet.. I said yes, it's just started, and she laughed,, she said I had snow in my hair.. And I had walked clear to the back before I spoke to her. Guess my hair was cold as well since it didn't melt quickly.  I needed a new mouse for my desktop comptuer. Jerry was getting a bit miffed that I kept taking his mouse off his laptop to use on my desk top.

Good Morning.
We really do not want to admit we are getting older (Can't be OLD, yet) But we went out for dinner last night (Ryan's) and for the next two hours just could not find anything we wanted to do. We don't go to bar's. It's just not for us. There isn't anything at the movies we want to see. We saw the orginal Tron and were not impressed with it then..so why would we want to spend that much more money to see it again.. And no one can do Rooster Cogburn like the Duke did. So no intrest in True Grit. As for "The Tourist" we will wait and rent it, again for much less.
We both had to admit that bowling is now out. Don't think either one of us could handle a 12 to 18 pound ball any more for 10 frames. There's no mini golf here.
So, we walked the mall. And we didn't buy a thing, I tried to talk Jerry into going to Game Stop but he said now. We walked all around Barnes and Noble and, well, we left empy handed.  Jerry went it to Spencers while I sat on a bench, my hip didn't like all the walking. Again, he came back out empty handed.  Oh man.. we are getting old, and picky. There isn't much on the tv to watch either. and we are both bored of sitting at home. 
I do have to go to Dollar General for pet food tonight. But I don't know if Jerry wants to eat first or after.. a bit depends on when he gets off tonight. He's not sure how many hours he's working today.. and our weekend plans have changed. Jerry will be working and he has not idea how many hours per day.. A major change in the blueprints have been made and the new plans call for moving some wires about.. maybe they can use the wire that's alreayd been pulled, but most likely they will have to run more tray, conduit and then pull wire before the end of Sunday. I think I may wait till Monday to do the laundry, but I need to wash my coat today, this afternoon. really.I'm ready to open the door, remove collars and boot the kitty's out. No reason for them to have used my coat for a pottybox. their box was clean enough.
 
Outside my door ...  Cold and Sunny. Our high may be in the low 30's if we are lucky today. But back into the 40's and 50's after today.
 
The dogs ...  Are sleeping on my bed, again.  they are keeping kittens warm.
 
The Kittens ... Are in deep trouble with me.. I just can't believe they peed on my coat. on my bed.  Usually kitten and puppies learn fast to not pee where they sleep and these kitten sleep on my bed, alot.  If I knew just which one it was.. it's be out the door. they are more than old enough to know better.
 
From the kitchen... I have to cook, tonight. I dn't want to lose the meat I have down and it's been thawed for 3 days, it's use it or lose it time. I'll brown it this afternoon and save me a few minutes when it comes time to fix the rest of the meal.. yeah.. that box of cheesy hashbronw skillet dinner. Still have jello in the fridge.. again if we don't eat it,, I may have to toss it. after 3 days Jell-o just gets so rubbery and the taste changes.

For Today...Jan 20, 2011

 
 
Good Morning.  I thought I was going to cook last night. But Jerry does not like to eat then go back out again. He had said we needed to go to Walmart, so I texted him if we were going out to Walmart and if so are we eating out. He said "Eat Out". We had Subway. I got the club on honey oat.. I loved it. Not sure what Jerry got. Turkey sub, I think.  Subway is next door to walmart. We got the TP we needed (one of the things on the short list) and I picked up a couple of items for a swap. I also picked up a couple of things for a recipe I found. I'll post it later.
 
Funny thing about this recipe. I had just typed it into my computer, when a friend of mine (Vicky S.) posted it, almost word for word, to some groups we share. I got it from the church cookbook I've been sending recipes from. How funny is that?
Jerry wants me to make the Cheesey Hashbrown boxed dinner I picked up this week so the recipe I want to try will have to wait until Monday, I'm guessing. Because Jerry expects to be off both days this weekend.
 

Outside my door ... This is going to be a backwards day... that is the older the day gets, the colder it's going to be. We have a chance of snow this afternoon/evening. I already told Jerry, I'll cook tonight.
 
The dogs ... Are trying to sleep while the kittens are in full play mode right now. I've heard them "warn" the kittens to leave alone twice now. The dogs enjoyed our walks yesterday. The last long walk was a bit of a challange since they were distracted by a cat and several squirrls. We had several "sit's" to get them to refocus.
 
The Kittens ... Are tormenting the Dogs, who want to sleep. both dogs are curled on Jerry's bed and the kittens are jumping from bed to bed, running up and down the hallway, jumping back on the bed, as close to a dog as they can get, off the bed. wrestling in the middle of the floor.  Up into the closet, Jumping down, with as loud a thud as possible, to the floor, Racing back down the hallway.. jumping into the bathtub. out of the tub, and back up the hallway on to the couch, turn around and back down the hallway, onto the bed and play with Macon's tail (He hates that) In the trash can, out of the trashcan. tackle each other, stop to play with a plastic bag on the floor. run down the hallway, race back to the plastic bag and jump on it to see how far it will slide... and I swear. Last night, one of the kittens was getting in trouble just so I'd spray it with water. She loved it and was soaked by the time I put them back into a kennal for the night. I'm half tempted to set up a dishpan of water in the bathtub and put her in it to see if she'll like that.
 
From the kitchen... Cheesy Hashbrown dinner (from a box)Green beans, sliced tomatoes, and Lime Jell-o with Pineapple in it.
 
I am hearing... Tv morning news, kittens fighting and plurting and the fan on the heater.
 
I am wearing... (6am) blue house dress. Will put on sweat pants and a top here in a bit.

Mixing Up a Little Love Potion #9

As well as being a cheesy romantic comedy from the 90′s starring one of my favorite actresses, Love Potion #9 is also sure to make your own true love swoon! This would be a fun fruit smoothies to serve your true love on Valentines.

Recipe for Love Potion #9

  • 2 cups frozen red berries
  • 2 cups milk – or less if you want it thick
  • 1/4 cup sugar
  • large glass
  • straw
  • red paper
  • fresh berries to top

1. Blend your fruit, milk, and sugar together and pour it into a large glass.

2. Add a few berries as the topping, giving it a festive fresh look.

3. Create a love straw with a red paper heart.

For the paper heart straw: cut out a heart from red paper, cut one 1/4 inch slits on the top and one on bottom of the heart, and thread a straw through.

You could create this Love Potion #9 with almost any kind of red drink, maybe a strawberry milkshake or fruit juice would work good too. Good luck playing cupid with your potion!

 Good Morning
 
 

Jerry got off at 5:30 and that should be the normal for the next couple of weeks. He may even have both days of the weekend off. That would ge great.  Our dinner was Steak off the griddle, Alfredo noodles and peas. Dessert was sugar free pudding. I fixed me a small salad before he got home because he's thinking salad is giving him the runs. Not good when the port a pot is on the other side of the building from where your working at. Imodiam seems to be helping him out.  Once he gets straightened out. We will be adding in one item at a time, to see just what is doing this to himl. He said it could also be his 57 steak sauce. Just have no idea. 
 
I've changed up the dogs and my routine a bit. Instead of walking between 9 and 10 am. I'm walking them at 8 am.. then after the weather is on the noon day news. And again at 4 pm.  We still have our short walk around 8 pm as well.  That is adding in one more walk than what I was doing before. I also want to add more to our "route" to the walk at noon.  Will also try to add the route at 4 pm if I feel like I have enough energy.
 
We may have some snow Friday morning. I hope not, it's only a small chance, according to the news. From sounds of things, not enough to keep Jerry from work, now that we have 4 new tires on the van. Beth, on the other hand is getting socked today. Weather alert said 7 to 9 and her local news says that at least 9 but expect even more. She said she'll miss tonight most likely and may even miss the rest of this week. Not Good. She's trying to save up enough money to buy a good truck.
 
Oh oh.. I'm proud of the dogs!! yesterday, as we were taking our 4 pm walk, we walked past a drive along that was coming in. No stopping to smell. Just a quick look at the door as if to ask if we were going to go in and get a ride.  Did "busness" and we walked the long ways around back. The rig had been parked on the back row, and the man driving it was outside. He spoke to the dogs. and they didn't go ballistic !! How about that. Sure they wanted pettings and Rocky did pull a bit, but NO BARKING from Macon. they both got treats and praises because that is a first. Someone speaking to me and them being good (Great)
 
The kittens spent a lot of time in the kennal yesterday.  They just were getting in to too much. Running is one thing. I know they need to work off energy.. but pushing things off shelfs in not acceptable.  Right now they are jumping bed to bed. and then running the hallway races. playing with the dogs food dish, back to the bathroom, back to the living room. on the couch (until I yell) batting the dog food dish again (it's a cut off milk carton) back down the hallway. up on the beds, jump from bed to bed, just missing the dogs on my bed. Back off the bed (Rocky gave them "the Look")
 
Dinner tonight is going to be a boxed meal. Hash brown cheese something. (too lazy to go look at the box right now) and I'll fix a can of green beans and a jello dessert. most likly Orange with pineapple in it.
 

Outside my door ... It's still cloudy, but it's suppose to clear off this afternoon with a high in the upper 40's to low 50's. This morning's walk was just in a sweat jacket.(hoodie)  I can tell the days are getting longer. Although winter weather is to come back on Friday, it's not going to be too bad.
The dogs ... Yesterday was a very good day (read above) this morning, they both let me know that an earlier walk was needed.  But they both did good. Not too much pulling now. Walking at my pace and they seem to understand I have to stop and catch my breath a few times. not sitting as fast as they use to, could be because the ground is cold and still damp in places. 
 
The Kittens ...  Are entering that stage of running and getting into everything at once.  I've gotten a scrathing pad for them.  and a water bottle to squirt them when they are getting into things they don't need to be in, like the trash can. For a while, they will have to sleep in the kennal at night. They can now make it though the night without making a mess in the kennal and I'm tired of having to pick things up before I can even start Jerry's breakfast. it's much safer for them and us. Getting them is is fairly easy. toss in a hand full of kitten food. They run in after it. close the door. We now have one that doesnt' want to go in. She gets put in a kennal alone. She does not like that.
 
From the kitchen... Kitchen Creations meal. (Kroger's brand) with Ground Beef. Green beans. Jello with pineapple for dessert.
 
I am hearing... Morning news, the fan on the heater, the kittens running up and down the hallway.
 
I am wearing... Dark grey sweatpants, light blue Eagles Nest T-shirt
 
I am reading... recipes, emails, "Exiles of Virgina" (need to finish it up)

Good Morning
whew, was I tired by last night. I started off the day with taking Jerry to work. We stopped at Hardee's to pick up breakfast. Got to the job and while Jerry was signing in, Macon decided to bark.. poor man (guard) Jumped a mile and backed way away from the van. I kept telling him they are tied in the back but he didn't want to come close at all. Ate breakfast while in the parking lot. Once Jerry got out of the van the sky was starting to lighten so that made it a bit easier to see while driving out. I went to the laundry mat. Man was it messy inside.. which is good I guess as that means it was busy. The ladies who work there came in a few mintues after I got there and started cleaning up. They are good. I just missed having a free wash. One of the ladies handed me some quarters because the other two people who were there got free washes.
I left there, going back to the camper. I stopped just outside the entrance and one of the men who works with Jerry, had followed me in. I didn't think about it because it was time to walk the dogs. He came walking back around the van and started me a bit.. of course the dogs wanted to be petted and he jumped back as I closed the back doors. He just let me know he was making sure I was not broke down and that every thing was ok.. I said yeah. it's good. It's time to walk the dogs and I do it up here, when I can.  Oh... ok.  It's nice to know he's looking out for me, ya know.
Got to the camper after taking care of the dogs and letting the kittens out of the kennel.Called Jerry and said, since I'm getting the oil changed did he also want me to get the back tires changed and he said yeah, we may be on the road next week. (OH?)
 I stayed at the camper for a couple of hours ( wanted to watch Y&R ) then went to Walmart and got the oil done and the tires changed out. Picked up a few other things as well as my insulin.  I got two more pairs of sweat pants, some stuff to dump in the holding tank, window cleaner and a spray bottle (want to clean the outside windows this week) I also got a cat scratch pad that I can put some catnip in .and boy do these kittens like catnip.  wow. It took a bit longer than I expected to get the work on the van done and I had walked around Walmart twice before they were ready.  From there, I headed to Hancock Fabrics. I wanted some paisly printed material in either cotton or a cotton blend or some wool. Hancock's has a sale on, but I ended up leaving without any thing at all. I didn't find any material I wanted. I liked the wool but not that much. I may try going back in a week and looking again. I have to remember how much yardage I need for the skirt I want to make.
Jerry called just as I was giving up on finding any material and asked if I was still at Walmart. No, but I can go back. He needs the strongest reading glasses they have and or a magnafying glass.. I picked up both.. he said that the print on the blueprints are way too small to read.
I went grocry shopping at Kroger's after I left Walmart. I spent just over $100 but I am re-stocking some things. I picked up two bags of rice and one of pinto beans so I can top that jar off. Picked up chips and pretzels for snacks this week. ground beef, ground pork and a couple of steaks for the rest of this week. I'll try to get the van next Monday unless Jerry has a day off this week.  Back to the camper. put away the foods, take the dogs out, let the kittens out of the kennel. Poor Rocky.. I had to put the kittens in with him while I was gone. That's when I set up the scratching pad for the kittens.  I put the kittens back into the kennel before leaving. Took the dogs with me to go get Jerry. Who had called me while I was food shopping to let me know they were getting off at 5:30. We almost didn't know what to do with two more hours.  We ate at Cici's pizza. Went to Best Buy, looking for new games to play on the computer. They don't have much of a selection at all. Jerry did find one he wanted to try. We looked at their mice but I'm not paying that price when I can get what I need at Walmart for much less. Came home. He set up his new game and we watched tv for a bit.
 
Now today. I've got to walk the dogs a bit more today so they can get that pent up engery out. Need to clean the camper. Put away the clean clothes, and figure out just what I want for dinner tonight.

Simple Chicken Salad

Simple Chicken Salad

2004
 
2 1/2 cups diced cooked chicken
1/4 teaspoon Salt
1/4 cup reduced calorie Salad Dressing (your choice)
1 Tablespoon minced Onion
1/2 cup Diced Celery
1/2 cup Diced Green Pepper
2 Tablespoons unsweetened Orange Juice
 
Combine  ingredients in a bowl. mixing well. cover and chill.  Serve on lettuce leaves. makes 6 (1/2 cup) servings.

Seven Layer Salad

2004

1 head of Lettuce, shredded

1 Bell Pepper,chopped

2 Stalks of Celery, chopped

3 Green Onions, chopped

1 can English Peas, drained

1 cup Bacon Bits

1 1/2 cup Mayo mixed with 1 Pack Equal or 1 Tablespoon Sugar

1 cup shredded Cheese, your choice.

Layer everything in a bowl in the order listed, Keep chillled

For Today... Jan 15, 2011


Good Morning
Wow, 1/2 the month has already gone by.  I had dinner all but ready, but we needed dog food and I know Jerry, once he's home he doesn't want to go out again. So he suggested we eat out.  I had just put the butter in the water for the instant potatoes.. Sure lets do that.  the meat was done, so I put it on a plate and in the fridge. Put a lid on the pot of water with butter. and poured the peas into a plastic container with a lid.  Easy enough to put away and fix tonight.  I need to find my glasses. I am not suppose to drive without them.
 
I "Had" a glass pie plate in the microwave oven to replace the turntable glass that broke a long time ago.. last night the pie plate broke. I didn't realize it was melting (yea, the glasss was melting) while I was trying to pop some popping corn in a paper bag.  I need Jerry to check out the floor of the microwave to see if the scorch spot is  ging to be a problem or not. I don't know how old this oven is. it came with the camper. but I'm thinking we are going to have to change it out.
 
 
 
Outside my door ...  The day is starting out grey and dreary, again. We are to get up in the upper 40's today, that should really help melt the snow that's left and turn everything into mud. I know it's only January but it would be nice if that's the last of the snow for this year.. I doubt we'll be that lucky.
 
The dogs ... Are spoiled. They love to sleep on the beds.. wether we are in them or not. Macon spent most of the night with me last night, until I finally got tired of him pushing my legs close to the cold wall and made him get off. He slept on my side of the couch. When I got up to get a drink he got off the couch, but when he realized I wasn't going to sit on the couch got back on it. Did the same thing when Jerry got up for a drink as well.
 
The Kittens ... I think one of them is trying me.. I found a largish damp spot on my bed, after Jerry left for work. I can't say for sure.. but I know it wasn't there when I went to the bathroom right after the alarm went off this morning. I need to do laundry anyways. but not today. I hope it all drys out well. I'll have to change things out anyway, but I want the mattrise to dry first.
 
From the kitchen... Yesterday's dinner. Ground Pork burgers, peas and instant potatoes. I think I'll make Orange Jell0 with Pineapple in it.  I'm going to try to go shopping tomorrow while Jerry is at work.
 
I am hearing... History channel on the tv with the Battle of New Orleans.
 
I am wearing... Maroon sweatpants and a blue sweat shirt.
 
I am reading...  I'll read another chapter of " The Virginia Exiles" today. Recipes and emails.
 
I am thinking... As much as we need the large paycheck, I want Jerry back on 10 hour days. He's too tired and it's too late for us to do the shopping like it needs doing, when he's working 12 hour days.
 
I am thankful for... Jerry having a job, and a great boss. He let Jerry leave a bit early at lunch time so he could get his check cashed. Jerry was a few minutes late getting back and he said it was ok.  He let Jerry leave early when I had called about the water leak. That he should work on it before it got dark.. it was dark before he finished it, though. Then it popped off again the next day.  But I let Jerry know it was just slipped off and it coudl wait until after work, Even though it was cold outside.
 
I am hoping... That this job lasts a few more weeks and that this company wants Jerry on another job.
Our new quote "Have camper, Will Travel".
I reminded Jerry to let the fellows at the job know that I'll do laundry, clean campers or do shopping from a list if needed. That's what I do to support the job. He said he'd try to remember. The only way that is going to happen is if somene mentions that they need someone to do that.
 
I am creating... A cleaner camper.
 
One of my favorite things... Being able to get out and walk. This morning, my knee isn't hurting me. first time this week that it's not been acting up. If it keeps this up, we will be doing a bit more walking.
 
A few plans for the rest of the week...
The usual. Laundry, food shopping. some other shopping.

Yow.  I'm one lucky person.
 
I tried popping corn in a brown paper bag in the micro. I've done it before but not in this one.
 
I saw a bit of red hot but thought it was just some food burning off under the pie plate that I have to replace the broken turntable that was in there.
 
I'm not sure what it was... but the glass had metled. the glass on the other side wasn't hot at all and I didn't think it was melted glass but some plastic.  I put the plate in my (cold) kitchen sink.. and it broke around that melted spot. My faucete dripped and the plate broke more.. a few minutes later the whole thing shattered. I'm not even going to touch it for a while I want to be good and sure it's Cold, before i try picking up any of the pieces..
 
I'm lucky in that I didn't get hit by any flying glass.

For Today... Jan 14, 2011
 
Good Morning.
It's still cold here, but not as cold. We may reach 40 today and we may even be in the 50's by the end of the weekend. That will melt the last of this snow off, I'm sure.
Jerry got the water fixed last night. Took him about 10 minutes, only because his fingers were cold. I had to hold the worm clamp in place from the inside while he was outside using the screwdriver to tighten it.  I felt so bad for him to be out there, but he's the one who took the screwdriver with him in the van. I try to keep things like that in the camper so I can do minor repairs. And I think he still has my flathead screwdriver in the van as I don't recall him bringin any tools into the house when he was done with it.
 
Today is going to be Clean the Camper from end to end.  I've started in the back already, cleaning off the counter of it's normal clutter and wiping it down with cleaner. Yes, I'm taking my time. I have a cola bottle back there, filling up as I type, with the slow dribble we have going to keep the waterlines open.I have two more to fill while I'm at it. I "Hoard" bottles of water. I threw away about 20 cola bottles that I had filled with water when I thought we were going to have to leave that rv park and live out of Walmart parking lots for a bit. Luckly we didn't have to do that. I was finding all sorts of places to keep extra bottles at.around the  water heater, behind the john. under the sink. But after about 3 months the cola bottles seem to turn cloudy and I'm guessing the plastic was starting to break down. Not a good thing.
 
Jerry took the dog food bag of trash out this morning, but left the other, smaller bag.. in it though is yesterday's cat box scoopings. I think the dogs and I will be taking two long(er) walks today and one will include tossing out this bag. 
 
The dogs were more that willing to be "quick" this morning, out behind the camper. I'll be yard scooping this weekend. I can use the cat box scoop to take care of that job.  The kittens spent the night in a kennel.. they just would not settle down for the night.  Good thing, as I found out Jerry had pulled out the quarters from his jar and left them on top of his computer. Just think how far 4 kittens could spread out about $5 of quarters.
 
Outside my door ... It's cloudy right now, but the sun is suppose to come out before Noon and warm things up a bit. There is still a bit of snow on the grass, but the roads are clear and dry now. It was clod enough that the ice and snow was crunchy underfoot when I took the dogs out 
 
The dogs ... are sleeping on my bed, again. It's about the warmest room in here as we have a heater at each end. The floor is cold but midway up is not as cold so they are staying out of my way by sleeping on the beds.
 
The Kittens ... have finally decided that now's a good time to sleep. They have had their morning romp through the camper, climbed up into the shelves. Been in the bathtub. in the bathroom sink, behind the John, and eaten what food I had out for them. Gads how can 4 small bodies get into so much trouble.
 
From the kitchen... navy beans and ham for dinner.. something that is easy to fix. can handle long cooking in the crockpot and yet be filling.
 
I am hearing... Morning news, water dribbling, fan on the heater.
 
I am wearing... Maroon Sweat pants. purple sweat top.
 

I am reading... The kittens had knocked
The Virginia Exiles" out of the top shelf of the closet and I really need to finish it.  I've read one chapter in it. Not much more to go, and I'll have it finished.
 
I am thankful for... I have to find my glasses so I can get the van and do some running around tomorrow.. Laundry, shopping, Maybe get the other two tires on the van changed off.
 
I am hoping... that Jerry goes back to 10 hour days soon. I like to eat dinner with him, but eating at 8 pm is way to late for me to be eating, really.

Strawberry Banana Smoothie

Strawberry Banana Smoothie
From the back of a Allure artifical sweetener box
1 cup (8 oz) fat free plain yourt, partially frozen
1 cup frozen unsweetened Strawberries
1 Banana, broken into 4 to 5 pieces
1/2 cup fatfree Milk
3 packets (.035 oz each) Sweetener
Additional Strawberries for garnish. optional
 
Combine yougurt, strawberries, banana, milk and sweetener in a blender. Blend until snooth. Garnish with a strawberry or slices of strawbverry if desired. make about 3  (1 cup) servings.

For Today...Jan 13, 2011
 
Good Morning.  Man oh man it's COLD outside !! we got  down to 12 last night. For this area that's really cold.  these little box heaters are working very hard to keep it somewhat warm in here. I'm wearing layers today.  Trowser socks under my cotton socks which go up to me knees, which are under my sweat pants. a tshirt under a sweat shirt under a light jacket.  I have two pot of water on the stove. one for tea for Jerry's lunch tomorrow and one to just have some dampish heat in here.. the sun is out but not up high enough yet to aid in the warming of the camper.
 
That first outings with the dogs, was to the back of the camper and less than 3 minutes. They don't want anything to do with being out in the Cold.
 
It was soo cold that our door froze shut and Jerry had to kick it to open it.. He broke the handle off. Some of it is still there but it's much shorter and for a bit, I was afraid that either I wouldn't be able to get out, or that I wouldn't be able to get the door to close again.. Lucky I can do both.. matter of fact, it's now easier to get the door closed as before we had to lift the handle to get it to close all the way.  But temper is not to way to fix things.
 
Well Durn IT !!!!!
The fix that Jerry did, didn't stay fixed.. the hose that he put over a piece of copper slipped off..problem is, he has the tools with him so I can't fix it either. I would if I could, since I can see what it is and it's just slipped off. All I would have to do it loosen the worm clamps, slip it all back together, then tighten the worm clamps again.. but I can't because Jerry put all the tools in the van when he finished up, instead of giving me back my tools. I have enough water for the day, as I can always do the dishes tomorrow. So I'm ok in the water department for the day. Enough for me to cook my lunch with, and drink and enough for the pets as well.  And I can flush a few times if needed, with what water I have on hand.  That is one reason I keep cola and juice bottles of water around,, just for inconviences like this one.  I'm thinking I better keep more water bottles in the bathroom, for a while at least.
 
Outside my door ... It's sunny but COLD. our high is to be just at freezing today so I doubt we will see the last of the snow yet.  Most of the schools in the area are back in, but on a delayed schedual.  It's hard to believe that we will be back in the 50's by the end of the weekend.. that will melt the rest of this ice and snow.
 
The dogs ... Are sleeping on my bed. I pulled the coveres over them, and they stayed that way for about 1/2 an hour. Rocky was the first to get out from under the blanket but Macon was out not long after. They don't like this cold. although they thought we were going out, again, when I put on my jacket. Nope, not yet, let's let the sun come up and start to work first kiddo's.
 
The Kittens ... Are sleeping in the top of the closets. How they are getting up in the one on Jerry's side I have no idea. they climb up the clothes I have hanging on my side to get up there. But they want to push things out of their way and that makes me get upset with them. I know they want to be warm but they don't need to do that.
 
From the kitchen... Payday.. don't know if we are going out or not, just yet. I'll have to text Jerry and see if he want's to go out or eat at home.
 
I am hearing... Morning News, water boiling, fan on the heater running
 
I am wearing... brown sweat pants and a whiteish sweat shirt, Jacket on top of that.
 
I am reading... emails and recipes. two chapters of the Bible.
 
I am thinking... We always seem to have the most break downs in the coldest of winter and hottest of summer. so maybe the rest of winter will not be so cold, now.

Good Morning
Man, it's cold outside. Last I heard we were at 18F. Jerry took care of the water leak last night. it's still got a drip and the bathroom carpet is not drying up but he said he'll have to wait for it to warm up before he can stop the drip. That will be this weekend.
I have the lamp that is normally over my bed, at the hole in the back of the camper that opens to where the water lines are, to help keep the pipes from freezing.. It worked. We still have running water. I have a pan of water on the stove top to help bring in some humidy in here as well a some heat. We will have this same weather tomorrow and tomorrow night, but then we are headed back up into the 50's again. Lee county schools are closed yet again today. I am glade that Hershel let Jerry come home at 4 to fix the water leak. I'm sure he wanted Jerry to stay, but we needed to fix the water leak, to save the rest of the waterlines from freezing overnigh. I'm sure Jerry will be cold, hungry and tired when he gets home tonight. The job was suppose to finish up this week, accordind to the orginal contract, but I think it's been extended by two weeks and Jerry says that's not long enough, either.  So we may have work for until the end of the month. I sure hope so. Don't know what happens at the end of this job. I'm hoping Hershel will want Jerry on his next job, as well.
 
Outside my door ... COLD!!! 18 is cold. But, the sun is suppose to come out and the solar heating will help keep the camper comfortable. I think I'll be drinking lots of hot tea today. We still have some snow around. It's slowly been melting and the dogs are not sure if they like the cold stuff still, or not. Rocky is getting much faster at doing what he's outside to do, then head back to the house. Macon still wants to play though.
 
The dogs ... Macon wants to play in what snow is left. He still wants to run and jump and roll in the stuff. Rocky just wants back into the house and back onto one of the beds to warm up again. Macon was a pain in Jerry's backsides last night. Jerry went to bed early and I had to call Macon off of his bed 3 to 4 times before I headed to bed.  I had to get up in the middle of the night and Jerry's feet were in the hallway. Macon had pushed Rocky over and was slowly pushing Jerry off his own bed. I know Rocky at scotched at Macon before I got up, so I put Macon on a kennel for the rest of the night.  At one time, I had Rocky with me, because Macon had pushed him off Jerry's bed. And I had woke up once, looked over at Jerry's bed and Rocky was on the edge of the bed, close to Jerry's chest. Usually the kittens sleep there. I heard Rocky fall onto the floor not long after that. That's when he got in bed with me.
 
The Kittens ... Because there was a light on in the bathroom were up half the night playing. Chasing and running and jumping.. once I know of, they jumped on Jerry's bed and must have caught Macon's ear or tail cause he barked at them. I could hear them on the back of the couch, in the blinds. Then they were back in the bathroom, in those blinds. One of the kitties, caught my foot with claws on one of their runs down the hallway.. when I spoke up.. they left me alone.. I threated to put them all in a kennal for the rest of the night. don't tell me that kittens and dogs don't understand just what I was saying. Sometime during the night, they knocked the cover for Jerry's cell phone off the shelf on his side of the couch. I had to move a couple of things to find it for him before Jerry left for work this morning. I wanted my kiss before he left for work anyway.
 
From the kitchen... Since we ate out last night, I'm debating either fish portions or something made with ground beef. Either way, I'm thinking of using the tabletop oven to also help put more heat in here so it's nice and warm when Jerry gets home from work.
 
I am hearing... the morning news on the tv. the fan blowing and the water dripping in the kitchen sink.Oh yeah,, and Macon fussing over something he hears outside.
 
I am wearing... Dark grey sweat pants. light blue sweat shirt. I have on two pairs of socks as well. Thinking of finding a hat to put on.

Good Morning

Good Morning.
We still have lots of snow on the ground here. I've taken the dogs out for first walk and we had a time of it, slidding around and it's just plain out yucky underfoot.  I didn't take pictures yesterday. My knee was not very good. Today, it's much better. Resting it seems to be the best thing, right now.
We have a leak in the back. I told Jerry about it yesterday, but he sorta poopoo'd it. saying it has been there a while.. I tried to get him to check it out, but he didn't do it.. now this morning it's much worse.  I just hope it will not get even more worse before Jerry gets home from work. He never seems to like how I fix things.
It looks like the next few days are going to be very cold, by Mississippi standards anyway. Doubt we will be getting above freezing until Thursday afternoon. I think I'll fix fish portions tonight.  it's that or ground beef again.  
I need to get up from this couch and start my house work. Cleaning the bathroom, make the beds and at least do the dishes, and clear the counters in the kitchen area. I also have to vacum the floor and get the dog hairs up off the carpet.

  • Lifeguard
  • 1 1/2" standard pot
  • 1 1/4" wood ball bead
  • Small piece of blue foam
  • Natural or tan chenille stem
  • Toothpick
  • Small triangle of red foam
  • Kid on a Raft
  • 1 1/4" wood ball bead
  • Natural or tan chenille stem
  • Beach Ball Girl
  • 1 1/4" ball bead
  • 1 1/2" Styrofoam ball
  • Natural or tan chenille stem
  • Yellow yarn
  • 3/4" flat brush
  • #8 flat brush
  • #0 liner brush
  • Water container
  • Palette or plastic plate
  • Paper towels
  • Thick craft glue or low-temp glue gun and glue sticks
  • Scissors
  • Wire cutters
  • Ultra-fine tip black permanent pen, optional
  • Lifeguard
  • 2 1/2" rose pot stand
  • 2 1/2" saucer
  • Kid on a Raft
  • 3" saucer
  • 1 1/2" standard pot
  • Beach Ball Girl
  • 1 1/2" standard pot
  • Pool
  • 8" clay saucer

  •     Instructions
    Let paint dry between steps.

    Preparation:
    Flesh color mix suggestion: Daisy Cream and Patio Brick 16:1.
    Turquoise mix: Cloud White, Hydrangea Blue, and Citrus Green 4:1:1

    Lifeguard
    1. Paint ball bead and top half of pot body, flesh color mix; bottom half of pot, turquoise mix; rose pot rim and saucer, Holly Berry Red; and remainder of rose pot, Fiesta Yellow.
    2. Use brush handle end to dot Hydrangea Blue flower petals on bathing trunks and Holly Berry Red around rose pot rim. Dot flower centers with Tiger Lily Orange.
    3. Assembly: Trim chenille stem to form arms. Bend arm ends to form hands. Position and adhere arms on body. Position and adhere head on arms. Adhere toothpick to foam flag. Position and adhere onto hand. Position saucer on rose pot to form lifeguard stand.
    4. Paint top of head Hydrangea Blue to form cap.
    5. Use liner brush and Wrought Iron Black or black permanent pen to do face.

    Kid on a Raft
    1. Paint ball bead and top half of pot body, flesh color mix; bottom half of pot, Citrus Green; and saucer, Tiger Lily Orange.
    2. Use brush handle end and Fiesta Yellow to dot bathing trunks.
    3. Paint sunglasses on head with Wrought Iron Black.
    4. Use liner brush and Wrought Iron Black or permanent black pen to do face.
    5. Assembly: Trim chenille stem to form arms. Bend arm ends to form hands. Position and adhere arms on body and head on arms. Bend arms above head. Bend chenille stem in half. Position and adhere up inside clay pot for legs. Bend legs at knees and feet. Place kid in raft and secure with glue.

    Beach Ball Girl
    1. Paint ball bead flesh color and pot, Carnation Pink.
    2. Paint small Hydrangea Blue flowers on pot.
    3. Paint face with liner brush and Wrought Iron Black or permanent pen.
    4. Position and adhere chenille stem arms on body. Position and adhere head.
    5. Cut lengths of yarn for hair. Place a bead of glue down center or head and press yarn pieces into glue. Tie into two pigtails with ribbon.
    6. Use pen, stylus or other tool to score 6 equal sections on Styrofoam ball. Alternately paint with Holly Berry Red, Fiesta Yellow, and Hydrangea Blue.
    7. Position chenille stem arms above head. Bend ends and push into Styrofoam ball. Secure with glue, if necessary.

    Swimming Pool
    1. Paint outside of saucer, Hydrangea Blue.
    2. Paint inside bottom, turquoise mix.
    3. Paint inside rim Hydrangea Blue forming peaks to resemble water.
