"Chunky Chip Cookies" A "Southern Living" Recipe 1 cup shortening 1 cup butter OR margarine, softened 2 cups granulated sugar 2 cups firmly packed brown sugar 4 large eggs 2 teaspoons vanilla extract 4 cups all-purpose flour 2 teaspoons baking powder 2 teaspoons baking soda 2 cups regular oats, uncooked 2 cups cornflakes cereal 2 cups semisweet chocolate morsels 1 cup chopped pecans 1 cup flaked coconut 1. Beat shortening and butter in a large bowl at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add eggs, 1 at a time, beating after each addition. Add vanilla, mixing well. 2. Combine flour, baking powder and soda; gradually add to creamed mixture, mixing well. Gradually stir in oats and remaining ingredients. 3. Drop dough by teaspoonfuls, 2" apart, onto ungreased baking sheets. 4. Bake at 350 degrees F. for 10 minutes or until lightly browned. Remove to wire racks to cool. Yield: 9-1/2 dozen. |
I love my life. I keep busy with taking care of my Hubby and our pets. I am sure that Life is more than a clean kitchen and empty sink. If you were to visit me, you may find some craft or another 1/2 done on the table. We no longer travel since Hubby has retired, but we still enjoy seeing new places and faces.
