Mushroom Rice Pilaf

Mushroom Rice Pilaf

2004

1 1/2 cups Chopped Onion
1 1/2 cups (4oz) Fresh Mushrooms
3/4 cup uncooked long grain Rice
2 Tablespoons Butter
1 1/2 cup Beef or Chicken Broth
1/8 teaspoon Black Pepper
 
In a 3 quart saucepan, cook Onions, Mushroom and Rice in butter over medium heat, stirring frequently. until onions are tender and rice is lightly browned. about 3 mintues. Stir in broth and pepper.
Bring to a boil; reduce heat and simmer, covered for 15 minutes or until rice is tender. Let stand 3 miutes. Stir gently before serving.
