Beef and Potato Casserole
(Kind of a souped up meatloaf)

4 cups thinly sliced potatoes
1 onion thinly sliced

Spread both in bottom of casserole dish. Sprinkle with salt pepper and 1 teaspoon Parsley flakes

Mix:
1 Lb Ground Beef
1/2 cup Cracker crumbs or oatmeal
1 teaspoon Salt
1/8 teaspoon Pepper

Spread evenly over potatoes. Spread catsup over top.
Bake at 350F for 1 hour.
